Anzac Biscuits Australian and New Zealand Army Corps

Ingredients: 1 cup of rolled oats 1 cup of plain flour 1 cup of sugar ¾ cup of coconut 125 gms butter 1 tbp golden syrup 1 tsp bicarb of soda 2 tbp warm water

Method: Combine oats, flour, sugar and coconut in a bowl. Melt butter in a heat proof jug in microwave and add golden syrup. Combine bicarb and water, add this to the butter mixture then stir into dry ingredients. Place a spoon full of mixture onto a lined tray, press down with fingers lightly. Bake in a preheated oven for 20 mins at 140 degrees. Allow to cool, then enjoy.

Damper

Ingredients: 3 cups of sr flour pinch of salt 80g butter, chilled and cubed ¾ cup water

Method: Preheat oven to 200C. Put baking paper on tray. Mix flour and salt in a bowl. Rub butter into mixture until it looks like breadcrumbs. Add water and use your hands to combine ingredients until the mixture just comes together, add a bit more water if mixture is dry. Put dough onto a lightly floured surface and knead gently with your hands for 1-2 minutes until smooth. Shape into a flat ball and place on tray. Bake in the oven for 30 minutes or until damper sounds hollow when tapped.

Slice and serve warm with butter.

Jam Drops

Ingredients:

125g butter, softened 1/2 cup caster sugar 1 tsp vanilla essence 1 egg 1 1/4 cup sr flour 1/3 cup strawberry jam

Method: Preheat oven to 180 degrees. Line a tray with baking paper. Mix butter, sugar and vanilla in a bowl until pale and creamy. Add the egg and sifted flour, mix well.

Use lightly floured hands to roll mixture into balls. Place on the prepared trays. Use a lightly floured finger to make a dent in the centre of each ball. Spoon jam into the centre of each biscuit. Bake for 15 minutes

Coconut Date Energy Balls

Ingredients:

1 cup pitted dates 1 1/2 tbs coconut oil 1/2 cup rolled oats desiccated coconut for rolling

Method: Mix dates in a food processor. Add coconut oil, rolled oats and shredded coconut, process until everything comes together. Roll teaspoon size balls in your hands and then coat in the desiccated coconut .

Stewed Apples

Today in cooking we are making stewed apples.

We will peel, chop, core, slice, cook and mash….

Yum Yum!

Nachos Ingredients:

Plain corn chips Cheddar cheese

Method: Put a large corn chip into each bowl. Grate the cheese and sprinkle it onto the top of the corn chip. Cook in microwave for a few seconds so the cheese can melt. Enjoy eating!

Porridge

Today we explored the story of Goldilocks and the Three Bears. Not too hot, not too cold… We made porridge!
