BLACKBERRY & APPLE CRUMBLE A healthy twist on a traditional seasonal recipe
INGREDIENTS FOR THE FRUIT 675g (1lb 8oz) Bramley cooking apples 225g (8oz) blackberries 115g (4oz) caster sugar 2 tablespoons water INGREDIENTS FOR THE CRUMBLE 225g (8oz) plain flour 115g (4oz) butter 85g (3oz) demerara sugar Optional: substitute 56g (2oz) of flour for porridge oats or chopped nuts
Preheat the oven to 180°C/160°C fan/gas mark 4. Peel and slice the apples and lightly cook with sugar, blackberries and water until softened. Pour into an ovenproof dish (25cm x 18cm). In a mixing bowl rub butter into flour to resemble fine breadcrumbs, stir in sugar and oats or nuts if using. Sprinkle onto apple mixture and bake for 30-40 minutes in a preheated oven until the topping is tinged with brown. Serve warmwith cream, custard or ice cream.
