Paradols
O
Paradols are β-ketone hydroxyl deoxygenation products of gingerols. Paradols represent another subclass of ginger ‘pungent principles’, and possess marked bioactivity. The content of paradols is more pronounced in ginger extracts as opposed to the fresh plant material.
