Rhubarb & Goat Cheese Salad Prep time Cook time Ready in Serves 5 min

ingredients Crumbled goat cheese Honey Stalk of rhubarb Walnuts Clementines Salad mix (any kind works)

directions 1. Preheat oven to 450 degrees, with racks in upper and lower thirds. 2. Cut rhubarb stalk into smaller pieces, apx. 3/4 an inch. Pour onto and cover pieces with honey (can do by hand or in bowl). 3. On a rimmed baking sheet, toss rhubarb with honey. Roast on upper rack until beginning to soften, about 5 minutes. Let cool on baking sheet. 4. Wash salad with cold water and place in bowl. Peel
