An extensive search for these rare barrels took the distillery to Andalusia, Spain. A proprietary red wine made to replicate the field blends of many of the old vineyards in Sonoma and Mendocino counties. Predominantly comprised of Zinfandel, OVR combines pure fruit, a supple mouth feel and a rich, solid structure. 60% aged in neutral barrels and 40% aged in stainless steel. Available in 750ml and 19.5L Kegs. Hand-picked Syrah (80%) and Grenache (20%) is sourced from several vineyards, including their Seven Hill estate vineyard. The wine was racked to 100% small oak barrels, mostly neutral, with four rackings over 18 months. Hand-picked Corvina, Corvinone, Rondinella is fermented in small stainless steel tanks. Ripasso is the result of a second fermentation on Amarone pomace that takes place in February the year following harvest.
