The wash was fermented, triple pot distilled and aged for a minimum of two years in neutral barrels. The 1980 vintage was named the #1 spirit of 2015 by F. Paul Pacult. The newly released 1978 vintage from the same Domaine was bottled in January 2018 at 40 years of age. # 3 0 1 9 9 5 9 0 OSOCA L I S D I ST I L L ERY | A P P L E B R A N D Y Founded in the early 1990's by Dan Farber, one of the Godfather’s of American craft distilling, Osocalis is an artisanal distillery located in Soquel, California. While their estate apple orchard matures, the brandy is produced from over a dozen varieties of apples grown in Northern California. While the base cider is reminiscent of ciders from the Basque coast, Osocalis uses the traditional French Alambic distillation and aging techniques of Calvados. A bold, pungent wine offering an old school-influenced profile of dark stone fruit, black olive, herb, tobacco and licorice. Cool and savory, but with considerable depth, the Armé is another knock-out wine from winemaker Scot Bilbro. This is a very serious, value-priced California Cabernet.
