OVEN BAKED VEGGIE FRIES 3 WAYS (PLUS DIP!)

GREEN BEAN FRIES Ingredients 1 lb green beans, washed and trimmed 1 egg, beaten 1/4 c Parmesan cheese 1 tsp dried garlic 1/2 tsp salt 1/2 c ground nuts (almonds, cashews or walnuts) Directions 1. Use a food processor to grind the nuts (or buy almond meal). 2. Combine egg, spices and parmesan. Coat beans in egg mixtue and then roll in ground nuts until evenly coated. 3. Move to a parchment lined baking sheet, allowing space between every bean. Bake at 425 ° F for 15 minutes.

YOGURT DIP Ingredients 1 c whole Greek yogurt 1/4 c fresh lime juice (about 1 to 2 limes) 1/2 tsp salt 1/4 tsp pepper 2 tsp fresh parsley, finely chopped Directions 1. Mix all the ingredients together and serve with any of these fries.

ZUCCHINI FRIES Ingredients 2 medium zucchini 1/2 tsp salt 1/4 tsp pepper

Sweet Potato Fries Ingredients 2 medium-large sweet potatoes 3 tbsp olive oil 1 tsp salt 1 tsp cinnamon 1/2 tsp cumin 1/2 tsp fresh parsley, finely chopped Directions 1. Slice the sweet potatoes into

1 tsp dried oregano 1/2 c breadcrumbs 1 egg, beaten Directions 1. First, slice the zucchini into long, thin wedges. Then combine the spices with your breadcrumbs. 2. Next dip each wedge in the beaten egg, then the breadcrumb mixture until it's fully coated. 3. Bake at 425 ° F on the top rack for 15 minutes until golden brown.
