CHICAGO DISTILLING USA ILLINOIS Handmade from Illinois Grains and distilled in small batches. Decades before the Great Fire burned, or buildings scraped the sky, Chicago’s distilling tradition was born. During the late 1800’s our predecessors transformed the bounty of nearby farms into the whiskey that fueled a city on the make. We like to think of ourselves as an extension of that tradition. To make our craft spirits, we start with organic grains sourced right here in Illinois. Using family recipes and techniques, we distill in small batches to ensure the best flavors and highest quality possible. Blind Tiger Bourbon 90PF / 200ML Upon the birth of prohibition Blind Tigers became synonymous with Speakeasies. Not as common as roaring speakeasies, Blind Tigers were locally known watering holes. By placing a tiger icon in the window of their establishment a proprietor signified that whiskey was being served. Patrons would pay to see an exotic animal and in return receive a complimentary pour. Our Blind Tiger is a nod to the dedication of those proprietors and the patrons who frequented their establishments. Blind Tiger Rye 90PF / 200ML / 750ML Our Rye mash bill has a high rye content to focus on the spiced notes inherent in the grain. Gentle on the front with note of light fruit and buttery toffee with a spicy finish of Midwest rye. Belgian Dark Strong Single Malt 90PF / 375ML This American Single Malt Whiskey takes on notes of biscuit dough with hints of sweet toffee, dried fruit and subtle nutty finish. Dunkelweizen Single Malt 90PF / 375ML This Single Malt captures the fruity notes of a wheat beer while maintaining the complexity of a hand-crafted whiskey. Hints of clove and fresh bread from the malted grain marry perfectly with the oak from the barrel. Octoberfest Single Malt 100PF / 375ML Limited annual release of single malt distilled from a classic Oktoberfest malt bill. Rauch Single Malt 90PF / 375ML This American Single Malt Whiskey is a great transition from a Scottish Single Malt Whiskey with a sweet earthy smokiness hints of creamy chocolate and malty caramel finish. Stouted Single Malt 90PF / 375ML By brewing a stout mash bill and distilling it into a Whiskey, this Single Malt has been making friends with beer connoisseurs and whiskey enthusiasts. Soft hints of cocoa open nicely to complex notes of roasted coffee and a slight nuttiness. Produced not exceeding 160º proof from fermented mash of not less than 51% malted grain distilled at one distillery.

HILLROCK ESTATE DISTILLERY USA NEW YORK Hillrock’s mission is to produce the finest hand-crafted spirit made with their own grain, floor malted, craft distilled in their copper pot still, aged in fine oak and hand bottled at an estate in

the Hudson Valley Highlands. Solera Aged Bourbon 92.6PF / 750ML

The World’s first Solera Bourbon. No barrel is ever fully emptied, and each barrel is occasionally partially emptied and then filled with new whiskey before being finished in 20 year old Oloroso Sherry Casks to balance flavors and add layers of complexity. The final product has an average age of 9.5 years and is one of the most awarded American whiskeys available. 93 Points Gold Medal Excellent Highly Recommended, Ultimate Beverage Challenge 2018 Hillrock Double Cask Rye 90PF / 750ml Double Cask Rye whiskey is aged in a second #4 char cask to add caramel and vanilla to balance the traditional rye spiciness. Hand crafted with rye grown naturally, distilled, aged and bottled in Hudson Valley, NT, the award winning Field-to-Glass whiskey clearly expresses Hillrock’s terrior signature of clove and cinnamon, complemented

by mint, caramel and butterscotch. Hillrock Single Malt Whiskey 96.4PF / 750ml Hand crafted with naturally grown barley, traditionally floor malted & peat smoked in the first new Malthouse built at a US distillery since Prohibition, then distilled, aged and bottled all onsite in Hudson Valley, NT, the award winning Field-to-Glass whiskey is layered with caramel and vanilla, balanced with the Estate’s terroir signature of cinnamon and clove.
