Status Update – Codex Document
Key Messages Currently no internationally validated methods that accurately measure sweetness of CHO sources for FUF products No stand-alone analytical methods for determining sweet taste of CHO in FUF or other foods; analytical methods determine CHO composition Sensory methods can determine perceived sweetness of ingredient or product but impossible to define reference sweetness intensity value as quality control indicator for CHO source in FUF relative to lactose Recommendations Revised Codex Standard for FUF specifies use of CHO sources not sweeter than lactose; However, findings indicate no internationally validated methods for enforcement; Therefore, recommend CCMAS advise CCNFSDU to reconsider provision based on findings or remove provision if CCMAS cannot determine suitable objective methods.
