MBK1: Purpose of Record keeping documentation and its completion
This card is about completing legal documentation that is required to be completed both daily and weekly within your business.
For example, fridge/freezer temperatures, cleaning schedules, cook/reheat temperatures, delivery temperatures, hot holding records, cooling records, high risk records & food wastage.
On completion of your training you will be able to explain and/or demonstrate each of the following;
• Which documents need to be competed and the frequency. • Why it is important to complete documentation. • How to accurately complete documents. • Which information relating to kitchen working practices must be kept by law. • The importance of accurate information input when completing documentation.
Prior to being signed off as competent on this task you must be able complete the below
- 1-2-1 training with your trainer
Access to relevant documents and can get extra copies if you need to. Write down information in a clear manner so everyone can understand it. Complete the paperwork at the correct times throughout the day. Keep the Records in an easily accessible and safe place in the business. Know when to speak to a Manager about any issues you have so they can be dealt with.
