Sufficient eateries? While many shops have closed, eateries, coffee shops and cafés or other forms of Food & Beverage (F&B) have stepped in, taking over premises on a large scale. Like in previous years, Danes continue to spend more money on dining out, with eateries in Copenhagen in particular benefiting from tourism growth, fuelled e.g. by international praise of the Danish gastronomic scene. Another factor contributing to the Copenhagen trend may be the city’s abolishment of charges for outdoor serving. Eateries and cafés have become a prominent feature in the city and in shopping centres too, where the trend is set to become even more pronounced. Several centres now feature food courts etc. to offer additional experiences, allowing customers to eat and buy food. Food courts in big shopping centres also help to make up for the weakening appeal of former anchor tenants, i.e. fashion and home electronics shops that suffer stagnant or slightly declining physical retail sales. Retail vacancies may be eliminated e.g. by conversion for F&B use, but although this segment is facing by no means the same scale of disruption as shops, competition is strong, with a record- breaking number of F&B bankruptcies in 2018-2019.

Spisesteder nok? Mens et stort antal butikker er lukket, er mange lokaler taget i brug af spisesteder, kaffebarer og caféer eller andre former for Food & Beverage. Ligesom tidligere år er danskernes forbrug til at spise ude steget, og særligt i København nyder spisesteder godt af øget turisme, som international ros til dansk gastronomi er en af årsagerne til. Udviklingen i hovedstaden kan yderligere være forstærket af, at København har fjernet afgiften for udeservering. Samlet har spisesteder og caféer vundet frem i gadebilledet, og det samme er sket og vil i forstærket grad ske i indkøbscentre. Flere centre har etableret madmarkeder blandt andet for at skabe flere oplevelser – her kan kunderne både spise og købe madvarer. Madmarkederne i storcentrene er derudover med til at kompensere for den aftagende tiltrækningseffekt fra de tidligere ankerlejere, i form af tøj- og elektronikbutikker, hvor det fysiske detailsalg er stagnerede eller svagt faldende. En løsning på tomme butikslokaler kan være at omdanne til spisested/café, men selv om segmentet slet ikke i samme omfang som butikker er udsat for disruption, så er konkurrencen hård, og antallet af konkurser var rekordhøjt i 2018/19.
