They say so many things about art and what it means. “Something created with imagination and skill.” “Something beautiful.” We say we’re all about the process this year, rather than the finished piece. This July, what we’re after is the art OF. The art of appreciating moments. The art of reframing challenges. The art of creating things, especially mouthwatering, healthy food kinds of things. So we're going to unleash our imaginations and send them outside to the grill. We'll tell them to play all afternoon in the sunshine, with a basketful of organic produce, or some lifetime-grazed beef perhaps. Maybe it'll be bison or yak. Because you see, we're making July about what summer was meant to be—The Art of Burgering. Our pursuit of art doesn't end between the crunchy soft rounds of a perfectly toasted bun—no, that means it's just begun. Our imaginations are on the loose now, and the possibilities are endlessly delicious. Salad is an art form worthy of perusal, whether it's potato, or made of fruit with a dash of basil. There's the art of cherry coconut popsicles too, and we can't forget a tall glass of strawberry lemonade. It should be sipped slowly on the patio to the tune of ice cubes clinking, and we think you'll agree—it compels company. Homemade popsicles are so simple to make, and kids of all ages love the bursting-with-fruit-flavor ice-cold treats. Not only do they keep you cool on hot summer days, but they also remind you what being a kid is all about—having fun! PREP TIME: 15 MINUTES | TOTAL TIME: 5 HOURS 15 MINUTES MAKES 6-8 POPSICLES (OR MORE DEPENDING ON MOLDS) ORGANIC CHERRY COCONUT POPSICLES

INGREDIENTS 1 (13.5-ounce) can Natural Grocers Brand Organic Original Coconut Milk 2 cups pitted organic cherries or Frozen Cherries ⁄ teaspoon organic vanilla extract ⁄ teaspoon Natural Grocers Brand Bulk Real Salt

3 tablespoons Natural Grocers Brand Organic Grade A Dark Maple Syrup

1. Shake or blend the coconut milk to combine the cream and water. INSTRUCTIONS

4. Carefully pour the cherry mixture into the molds on top of the coconut milk, leaving about one-quarter inch of room at the top, allowing the popsicles to expand as they freeze. Use a butter knife or spoon handle to gently stir the coconut milk and cherry mixture in the molds, creating swirls of white and red. 5. Place in the freezer and leave for approximately 5 hours, or until frozen solid. 6. When ready, remove from freezer, let sit at room temp for 5 minutes or run under warm water, remove from the molds, and store in a container in the freezer or serve immediately

Add the cherries, vanilla, salt, 2 tablespoons maple syrup, and ½ the can of coconut milk to a blender and pulse 4-5 times, or until the mixture is well combined, but retaining little bits of cherry; or blend to desired smoothness. 3. Add the last tablespoon of maple syrup to the remaining coconut milk and stir until well combined. To each popsicle mold, add approximately 2 tablespoons coconut milk (less if your molds are smaller). Note: You may need to stir the coconut milk while pouring to prevent the maple syrup from settling in the bottom.

Note: This recipe is versatile. You can exchange the cherries for mixed berries, single berries (blueberries, strawberries, raspberries), peaches, mango, or pineapple. The coconut milk can be exchanged for cream or yogurt. Experiment to find your favorite combo!

You lift one to your lips, your mouth watering for that divine flavor. It’s a moment when nature’s whims have aligned to deliver an unforgettable piece of fruit. In a word, it’s indulgent.

A LUXURY YOU DESERVE A heaping bowlful of cherries is an indulgence you owe yourself this summer! 2020 has been jam-packed with extra stressors, which leaves us more susceptible to oxidative stress and inflammation. Psychological and emotional stress cause oxidative stress because they trigger the production of hormones that generate free radicals that cause oxidative damage and inflammation. Furthermore, when we produce free radicals but don’t have sufficient antioxidants to keep them in check, they can damage healthy cells—and cellular damage is the first step in the development of poor health and multiple diseases. i ii iii That’s when we need to call on free-radical scavengers like the flavonoids found in cherries! These hard- working compounds also help to support a healthy inflammatory response—studies have shown cherries to significantly decrease markers of both oxidative stress and inflammation. iv v So go ahead and indulge! Life has been no proverbial “bowl of cherries” this year, but treating yourself and your family to a bowlful is one delicious way to make summer memories that are rooted in health. DON’T INDULGE IN A BOWLFUL OF PESTICIDE RESIDUE Cherries rank number eight on the 2020 Dirty Dozen list of fresh produce with the most pesticide residue, compiled by the Environmental Working Group; plus, they share THIS unappetizing statistic with several other fruits and veggies on the list: More than 90 percent of the samples tested positive for residues of two or more pesticides, and that’s after rinsing. vi You have enough stressors on your plate this season, why add unnecessary pesticide burden to the pile? Pamper yourself with organic. SAY NO TO HONEYBEE TOXINS! Remember the fascination of watching a buzzing bee in flight when you were a kid? What you probably didn’t know then was how vital these curious creatures are to our food supply, and cherries are a prime example. Without pollinators, the luxury of

sweet summer cherries ceases to exist. In fact, three percent is the maximum yield a cherry orchard can produce without bees, according to research out of Germany. And even cherry pie runs the risk of becoming obsolete. Studies from Michigan say the yield for tart cherries—a popular pie cherry—is down to ten percent without pollinators! vii So it’s NOT good news that there were residues of 14 different pesticides that are known to be toxic to honeybees found on conventionally grown cherries, according to routine USDA pesticide residue testing. viii Even more alarming is the global decline of pollinators. In the US alone, beekeepers have suffered an annual colony loss of 30 percent every year since 2006. ix Experts agree that widespread synthetic pesticide use, along with a loss of habitat and forage, are the main reasons for this loss, but there is another way. x xi CHOOSE ORGANIC FOR THE POLLINATORS—THEY DESERVE IT TOO! Studies show that organic farms support significantly more pollinators than conventional farms, and the following differentiators are key contributors: Synthetic pesticides, many of which persist in the environment and harm non-target species, like bees, are prohibited. Additionally, organic systems create habitats for beneficial insects and foster biodiversity, providing a broader range of forage options to attract a greater variety of wildlife, including wild bee species. xii A recent comparison study from Sweden is the cherry on top. As quoted in Science Daily , researcher Romain Carrié said of the project, “This is the first large-scale study over the course of several years to show that organic farming has a consistent, stabilizing effect on pollinator diversity.” xiii WE WISH YOU A VERY CHERRY SUMMER! Now we must go and find a bumblebee to wander after, so we’ll leave you with this suggestion: A bowl of cherries, a soft summer night, and you… go on and indulge yourself, in the name of good health, and make it organic, for love of the planet!

On an industrial hog farm in North Carolina, the animals are crammed together in dark, dirty spaces with no room to move. Waste falls through slats in the floor and is channeled into an open pit, where untreated excrement builds up until farmers spray it onto nearby fields, or until it ruptures, spilling into rivers and seeping into groundwater. i ii It's called a concentrated animal feeding operation, or CAFO, and it isn’t limited to hog farming—more than 90% of the meat consumed in this country come from CAFOs. iii The conditions are appalling and inhumane, the environmental repercussions are terrifying, and the workplace hazards are horrific. Yet there's another shadow cast by CAFOs that we may not consider enough—the health impact on nearby residents. Contaminants from CAFO waste are encountered by neighboring communities in multiple ways— through water, air pollution,

The study further isolated the zip codes which contained more than 215 hogs per square km and discovered the following: The residents of this group, age 24 or younger, had mortality rates that were much higher than those in the rest of the state and the US for the same age group. For infants under one, the rate was also higher compared to the national average. When taking disease-specific mortality into account, this region ranked number one for death due to kidney disease or with anemia as an underlying cause, and number four overall in the US. Although the study does not establish causality between the presence of CAFOs and rates of mortality in adjacent communities, it suggests a significant correlation. vii There’s another side to the coin—environmental injustice. Hundreds of studies point to “disparities in the location of environmental hazards

relative to race and class.” viii In NC, one study found that communities with more poverty and higher percentages of non-white people were nine times more likely to have CAFOs. ix When industrialized hog farming took off in the state, the location of farms shifted from one in almost every county in 1982, to 95% of operations clustering in a handful of eastern counties, in communities that were historically African American. x WHAT YOU CAN DO The negative health impacts associated with living near CAFOs are significant, and we can't ignore the disproportionate effects they have on children and minority communities. There is a better way to feed America. Know your label claims and

make sure that transparency, sustainability, and animal welfare are the minimum standards that dictate the animal protein on your plate. When buying pork, look for label claims of no antibiotics, vegetarian fed, gestation crate-free, and/or certified humane. These types of label claims ensure that the farmer is dedicated to the health and welfare of the animals and that the product did not come from a CAFO operation, where antibiotics are routinely used to promote weight gain and keep the animals just healthy enough to survive the abysmal conditions created on CAFOs. It's the only way to eat for your health, the planet, and neighbors too.

The stench of rotten eggs and ammonia is the unpleasant reality that residents of NC’s hog farming counties must deal with regularly. v The state, which is the second-largest hog producer in the country, is uniquely suited to studying how CAFOs may affect the wellbeing of nearby communities. Compared to other hog producers, NC has more animals per farm and substantially higher population density near farms than other leading states. A study, published in the North Carolina Medical Journal , looked at health outcomes and mortality rates in communities in these areas, and found some alarming parallels, most notably, higher rates of all-cause and infant mortality. vi

4. Heat the grill to medium-high. Gently place the burgers on the grill and close the cover. Grill for about 5 minutes on each side; burgers are done when they reach an internal temperature of 160º F. 5. Serve the burgers on buns or lettuce leaves, topped with the relish.
