INGREDIENTS: 3/4 cup mayonnaise 2 tablespoons apple cider vinegar or lemon juice 2 teaspoons yellow mustard 1 tablespoon sugar Salt and pepper to taste 1 cup celery, diced 1 cup carrots, shredded 2 tablespoons scallions, chopped 1 cup sharp cheddar cheese, grated 8 strips cooked bacon, chopped 6 cups popped popcorn, unflavored (about 1/4 cup popcorn kernels) Lettuce or spinach

DIRECTIONS: 1. In a bowl, combine the mayonnaise, apple cider vinegar, mustard and sugar. Add salt and pepper to taste. Mix well and then set aside. 2. In a large bowl, add the celery, carrots, scallions, 1/2 cup cheese and 1/2 cup bacon. Toss to combine. 3. Add the dressing and mix well. 4. When you're ready to serve the salad, fold in the popcorn. 5. Add lettuce or spinach to bowls. Spoon the popcorn salad on top and then garnish with shredded cheese and bacon. Enjoy immediately.
