Thanksgiving Dinner HOW TO MAKE THE PERFECT GRAVY BY EXECUT IVE CHEF AARON TIP #1: STOCK UP ON TURKEY PARTS Create your stock by buying whatever turkey parts (wings, necks or smoked bones, etc.) that are avai lable at your grocery store. You’ l l want to roast the parts in the oven unti l they’re golden brown and then add them to a large pot with enough water to cover the pieces. To bui ld flavor, add the aromatics of your choosing (onions, carrots, celery, herbs, salt). TIP #2: THINK AHEAD Putting together an entire Thanksgiving dinner can be a bit overwhelming, so take the help where you can get it. Also, try making your stock a few weeks ahead and storing it in the freezer. TIP #3: SAVE YOUR PAN DRIPPINGS Never, ever dump the pan dripping from your turkey. This is bui lt-in flavor that wi l l enhance your gravy. TIP #4: PERFECT YOUR ROUX Bui ld your roux (google it!) by combining the turkey drippings with flour and cooking it unti l the flour tastes nutty. Then, add the stock to the roux. The roux should be wet and sludgy. You’ l l then want to cook the mixture unti l the flour flavor is gone and the gravy is thick enough to coat the back of a spoon.

TIP #5: GET CREATIVE Who says you have to stick with a simple gravy? Mix things up with a variety of ingredients, from maple syrup to miso paste.

And of course, if al l else fai ls order some gravy and whatever else you need from the club!! We’d be glad to make your Thanksgiving great by helping you to relax and enjoy!!

Have a safe and tasty hol iday season! -Chef Aaron

GOLF TIP OF THE MONTH PAGE 11 AROUND THE BEND NOVEMBER 2019 Ron Nutty, PGA Head Golf Professional Fairway Bunkers Who among us hasn’t struggled out of a fairway bunker a time or two? Do I pick it clean? Do I catch the sand? First: Play the ball back By moving the ball back in your stance it will allow you to hit down on the ball so that you contact the ball before making contact with the sand. Second: Dig in When considering a fairway bunker shot you need to be making a full swing. By digging your feet into the sand you will provide yourself the stability to allow you to do so. Third: Choke up Once you have dug yourself into the sand it is important to realize that your feet will now be below the ball. To optimize your chance of success, choke up on your iron in proportion to the amount which you dug into the sand. This will ensure that with a regular swing you will not catch the sand first. Forth: Be Balanced Try to distribute your weight evenly between your two feet. Keeping your weight even will help maintain your stability throughout the swing and lead to better contact and a better golf shot. The Answer is yes. To hit a good shot out of a fairway bunker you need to make clean contact with the ball and then hit the sand. To do this you must:

Tips for playing great tennis in cooler weather With the cooler weather arriving, there are a few things we can be doing to maximize our success on the court. Early preparation

Dress the part It is important to be dressed for success during the cooler weather. Several thinner layers is much easier to move around in compared to a heavy jacket. Remember to warm up and Stretch Our muscles take a lot longer to warm up in the cold, meaning it is easier to injure ourselves if not properly warmed up. Be sure and stretch at home and then warm up and stretch again before you get on the court. Remember we need to raise our body temperature a little by walking or jogging around before we begin stretching. Best shots for cooler weather tennis The cooler weather will not only have an effect on you but also on how the ball and court plays. During the cooler months the ball will tend to have less bounce and feel “heavier”. Likewise the courts (in particular clay courts) will tend to play much slower. Taking this into mind, there are some shots that can be very effective during this time of year: Slice: Incorporate more slice into both your ground-strokes and approach shots. This will keep the ball low and out of the hitting zone of your opponent. With the ball being heavier, it will also make it more difficult for your opponent to get under the ball.

Even though we should be preparing early no matter the time of year, early preparation can be a great thing to focus on during the cooler months. With the ball being heavier, it is much harder to control the ball if you make contact late. Likewise, you will tend to be moving forward more often for shorter balls and an early preparation can really help on these shorter mid court balls. Restring your racquet The pace of a ball is determined by several factors including the bounce of the ball. With the heavier and lower bounce in colder weather, the ball will naturally come off the racket slower, making it harder to generate more pace. To offset this, it is a great idea to have your racquet restrung at 2 pounds less during the wither. Why would that make a difference? In general, rackets strung on the lower end of the tension range provide more power than tightly strung rackets. When you hit a tennis ball, the impact causes the strings to deform or stretch. Energy from that impact is stored in the strings and then returned to the ball as it rebounds off your racket. Loose strings stretch more than tight strings and therefore, store more energy; so, when the energy is returned to the ball, you have a more powerful shot. Try to incorporate some of these tips into your game for the Fall/Winter months to take your game to the next level!!!!

Drop shot: Take advantage of the heavier, lower bounce, and use the drop shot often.

Flat and slice serves: These serves will force your opponent to have to get down under the ball. Topspin isn’t as effect as the heavier ball will tend to negate the “kick”.

Hit higher for depth: The balls will be “heavier”, so you will need to hit all shots a little higher when you are wanting to hit depth.
