What’s in season? In fields, backyards and farmers’ markets around the Island, signs of spring are all around. Make good use of the fresh, vibrant new vegetables and fruits available March through June on PEI.
Fiddleheads
Fiddlehead greens are the furled heads of a young fern that is both commercially grown and foraged across At- lantic Canada from the middle to the end of May. To cook fiddleheads, remove the brown papery husk before wash- ing in several changes of cold water, then boil them in salted water. Boiling reduces the bitterness and the con- tent of natural tannins, so try changing the water halfway through cooking, for a total cooking time of about 12 min- utes. The flavour of these seasonal greens is like a cross between spinach and asparagus, so try them with lots of butter and garlic
Asparagus
Rhubarb
Although technically a vegetable, rhubarb is treated as a fruit despite its’ tart flavour. Its stalks are dark red tinged with green, and its (poisonous) leaves are a bright green. All rhubarb is too tart to be eaten raw, so it’s best cooked with plenty of sugar. It goes well with ginger, citrus and strawberries and is very at home in pies, cakes and jams.
Labour-intensive to grow, asparagus are the young shoots of a particular kind of lily plant. They’re one of the delicacies of the vegetable world, with a price tag to match, and have a distinct, intense savoury flavour. PEI asparagus is available late May to late June in farmers markets. It tastes great prepared simply. Try sautéing it over high heat for about 3 minutes with some olive oil, salt and pepper.
Radishes
Onion Ramps & Garlic Scapes
Radishes are part of the Brassicaceae family, along with cabbage, mustard, kale and broccoli. These are one of the earliest crops available on PEI, as they only take about a month’s growing time and are at their peak from May through July. Radishes come in a wide range of shapes, sizes, colors, and colors, but they are all a great treat, with crisp, peppery roots that are great for snacking, pickling, or in salads.
Both ramps and scapes are from the Alium family, home to onions, garlic, leeks and chives. In mid-spring, these bulbs sprout some curly and leafy edible greens that can be found both in the wild and in farmers’ markets. Look for bright green, tender shoots and try adding them to salads or lightly sautéing them with butter and salt.

Directions Lay a clean dishtowel on your work surface. Use a hand grater to grate the potatoes onto the towel. Season with salt and pepper, then toss to combine.
Wrap the potatoes up in the towel, then let stand for 10 minutes.
Radish & Cucumber Salad From page 28 Serves 6
Baked Eggs with Mushrooms & Gouda From page 26 Makes 6 ramekins • 2 tbsp butter, divided • 2 cup button mushrooms, halved • 6 eggs • 1/2 cup grated mild gouda • Salt and pepper to taste • Chopped fresh chives
Heat a 9 or 10-inch cast iron skillet over medium-low heat.
• Juice and zest of 1 lemon • 1/3 cup olive oil • Salt and pepper to taste • 1 tbsp Dijon mustard • 1 cucumber, thinly sliced • 1 bunch radishes, thinly sliced • 1 tbsp chopped fresh dill • 1/4 cup chopped fresh parsley Directions In a large bowl, whisk together lemon, oil and Dijon. Add cucumbers, radishes and dill and toss to combine.
Twist the dishtowel firmly to squeeze out the excess water from the potatoes. Get as much out as you can! Add half the oil to the pan, then press the potatoes into the pan in a single layer, pressing them down just a little bit. Cook for 8-10 minutes, until golden and crispy on the bottom. Place a large plate upside down on top of the skillet and flip the pancake onto the plate. Return skillet to burner, add remaining oil, then carefully slide the pancake back into the pan with the cooked side up. Cook another 5 minutes, until golden and crispy. Serve with fresh chopped herbs and sour cream.
Directions Preheat oven to 400F. Use half the butter to grease the ramekins generously, then place them on a baking sheet. Heat remaining butter in a large skillet over medium heat. Add mushrooms and sauté for about 5 minutes, until browned. Season with salt and pepper. Divide mushrooms between ramekins, then crack an egg into each and top with cheese. Bake for about 15 minutes, until the egg whites have set. Remove from oven and sprinkle with chives.
Season to taste with salt and pepper.

For the Rhubarb Syrup: • In a medium saucepan, combine 2 cup chopped rhubarb, 1 cup sugar and 1 cup water. • Simmer on low heat for 3 minutes, then strain through a fine mesh sieve. • Refrigerate until ready to use. For the Punch: • 2 bottles non-alcoholic ginger beer • 8 oz Captain Morgan Spiced Rum • 1 cup rhubarb simple syrup • Juice from 1 lime • Lime wedges and mint to garnish Combine everything (except the garnish) in a large pitcher and mix well. Pour into ice-filled glasses and garnish with a lime wedge and fresh mint.

Directions Preheat oven to 400°F In a large bowl, mix flour and sugar. Add strawberries and chopped rhubarb. Toss with sugar and flour and let stand for 30 minutes. Roll out ½ the pastry recipe and place in bottom of pie tin. Roll out remaining crust and use a cookie cutter to cut into shapes, set aside. • 1 cup white sugar • 1/2 cup all purpose flour • 3 cups fresh rhubarb, chopped into ½inch pieces • 4 cups halved fresh strawberries • Zest of 1 orange • 2 tbsp butter • 1 recipe pastry for a double-crust pie • 1 egg yolk, beaten Strawberry Rhubarb Pie From page 32 Makes 1 Pie

• 2 oz tomato juice • 1 1/2 oz Smirnoff Vodka
• 1 tsp Worcestershire sauce • 1 tsp prepared horseradish • 3 dashes hot sauce • Freshly ground black pepper • Squeeze of fresh lemon • Coarse salt for rim and celery, cherry tomatoes and lemon for garnish. Directions In a tall glass, stir together tomato juice, vodka, Worcestershire sauce, horseradish, Worcestershire, hot sauce and lemon. Rim another glass with salt, then fill with ice. Pour Bloody Mary mixture into the second glass. Garnish with celery stalk, cherry tomato, and lemon wedge and serve.
Raspberry & Peach White Sangria
From page 36 Makes 8 Drinks
Pour filling into pie crust. Dot top with butter, then decorate using cut-outs.
• 1 1/2 cups peeled fresh peach slices (2 large peaches) • 1 cup fresh raspberries • 1/4 cup fresh orange juice • 2 oz Matos Orange Liqueur (16017Z) • 1 bottle Woodbridge by Robert Mondavi Pinot Grigio (09541Z) , chilled • 2-3 tbsp simple syrup, if desired. • Club soda Directions In large pitcher, mix peach slices and raspberries. Stir in orange juice, liqueur, wine and simple syrup. Cover and refrigerate at least 2 hours, or overnight. To serve, divide fruit between glasses, then pour in the wine mixture. Top up with club soda to taste.
Use a pastry brush to apply yolk to top of pie. Bake for 35 to 40 minutes, or until bubbly and brown. Cool on a rack for 30 minutes before serving.
