La Maison Tiffon was founded in Jarnac in 1875, and in 1919 Cognac Tiffon was established - plenty of history behind this family-run house. Tiffon XO is a blend of Grande Champagne and Petite Champagne, that's why this cognac can be called Fine Champagne, at least 50% Grande Champagne eaux-de-vie. # 3 0 1 8 9 3 1 7 CHAT EAU DE TR I AC S I N G L E V I N E Y A R D C O G N A C Cognac Tiffon offers a single-vineyard expression from the vineyards around the Chateau de Triac, located in the Fin Bois. After fermentation in stainless steel, estate grown Ugni Blanc was distilled, proofed to 50- 55% ABV and matured in Tronçais or Limousin oak casks for an average age of 6 years. # 3 0 1 8 9 3 1 1 ME ZCA L L A HERENC I A DE SANCHE Z P O N C H E D E F R U T A S A seasonal Mezcal, this unique, protein-less, recipe is based on the traditional “PONCHE” or holiday punch that is made in December.   All the ingredients, the fruits - green apples, guavas, tejocotes (kind like a crab-apple), cinnamon and prunes - are cooked prior to their inclusion. Vina Eguia was established in 1973 in the Rioja Alavesa. Grapes from 30-40 years old vines were fermented and macerated for 20 days in stainless steel and then racked twice. Aged in American oak (30% new) for 24 months, followed by one year in bottle. # 3 0 1 9 5 6 3 5 BODEGAS MUR I E L R I O J A R E S E R V A 2 0 1 4 Vines are planted in very poor calcareous soils of a clay loam texture and grown mainly using the traditional gobelet-pruned system. The fermentation and maceration process in stainless steel vats, with a daily pumping over lasted 16 days. The wine was aged for 12 months in 60-gallon barrels of American and French oak (25% new). # 3 0 1 9 3 4 6 9 PA ZO C I L L E I RO A L B A R I Ñ O R Í A S B A I X A S 2 0 1 5 Hand-picked grapes from 20-25 year old vines planted in Salnés Valley are hand-sorted, destemmed and fermented in stainless steel tanks with no malolactic. The wine is aged for 4-5 months in the tank, and three months in bottle. # 3 0 1 8 8 2 4 7
