tillado is one o£ the best Sherries and very expensive because it takes 15 to 20 years to develop. Oloroso and Amoroso are soft blends and are slightly sweet.

PORT

Another district named wine comes from the Oporto district in Portugal. This is a wine that needs age and really should pass its twelfth year before leaving the wine cellar. Of course there are younger ones put on the market. A vintage port is vatted for about two years before being bottled and then picks up its age.Tawny is a blended light port. Ruby is more colorful and has more body. Invalid is a medium light wine. Both French (Dry) and Italian (Sweet) Vermouths are fortified wines and infused with different herbs. The better vermouths are matured in oak casks. Coctkails of the aperitif variety would not amount to much without them.The French is a very light white wine. The Italian is a heavier wine with a rich red color and has more and different herbs. Both run from 18 to 20% alcohol by volume. VERMOUTH

TOKAY

From Hungary comes this fine unfortified wine and has always had a following of those who know their wines. Szamorodni and Aszu mean dry and sweet.

BRANDY

Brandy can be made from any fruit and is made at a proof low enough to retain the flavor and the bouquet of
