My decided opinion on the nature of alcoholic fermen tation is, the chemical act of fermentation is essentially a correlative phenomenon of a vital act beginning and end ing with it. I think there is never any alcoholic fermenta tion without there being multiplication of globules already found. Pasteur. Pasteur also showed that spontaneous fermentation was an impossibility. Beer, Ale and Stout are all healthful beverages and they and their yeasts contain many vitamins. There is an average of close to 300 micrograms of riboflavin in one twelve oz. bottle of beer; the daily requirement for an adult is about 2000 micrograms. We use the Irish measure ments in barrels 32 gals, halves 16 gals, quarters 8 gals, and eighths 4 gals. Here is also a table giving the liquid con tents of a barrel and the proceeds therefrom according to the different sized glasses. The liquid contents of a 32 gal. beer barrel is 31 gals, and this table will show the proceeds therefrom according to glasses.
