The grapes for this wine are sourced from Aconcagua Costa vineyard, located 7 miles from the Pacific Ocean. The climate is Mediterranean, but cold weather conditions occur due to the closeness to the sea. This is an exceptional Pinot Noir with notes of crushed cherries, rosehip, mulberries and red currants with hints of lavender and spice. The wine is medium bodied, with a juicy palate of fresh red fruit and earthy notes. Well structured and elegant, with intense mineral notes. Food pairing – Salmon, roasted chicken and lamb.

Sartori Ripasso is a wine based on the Corvina grape, with the addition of Rondinella and Molinara rounding out the blend. The secret to Ripasso’s rich flavour is the way it is produced. The Ripasso method is a technique achieved by the re-passing of the Valpolicella wine on the dried grape skins of Amarone. The Valpolicella remains in contact with the pomace of the Amarone for 10 days, during this time a second fermentation occurs. Sartori Ripasso has red berry and cherry aromas, with dark fruit, spice and raspberry notes on the palate. Serve with stews, red meat and aged cheese.

Warm, sunny days and cool nights in San Fransisco Bay, California provide unique growing conditions to produce robust red wine with great intensity. Ancient vines yield fewer grapes with great character. The grapes are hand picked and the wine is aged in oak for 10 months. Spicy aromas of vanilla and nutmeg with dark berries, coffee and chocolate on the palate. Serve this zinfandel with anything barbecued.

First this Shiraz was matured in oak barrels and finished in scotch whisky barrels , this unique double-barrel technique adds smoothness and richness to the palate. Aromas of black fruit, toasted oak, mint and eucalyptus on the nose. Jacob’s Creek Double Barrel is full bodied with flavours of blackberry and cherry. Pairs nicely with sirloin steak.

The grapes for this Chardonnay came from a vineyard just 12 km from the Pacific coast. The hand-picked grapes were selected and fermented in French oak barrels with natural wild yeast for complexity. Tropical fruit, quince, honey and floral notes on the nose and palate. Serve with fish, or creamy pasta.

Ready for a sunny deck this Riesling Kabinett from Mosel, Germany offers sweet – tart- white peach, pear and pineapple flavours. Dr. Heidemanns is light on the palate with tingling acidity.

Côté Mas Rosé, is made with traditional Mediterranean varieties: Cinsault, Grenache and Syrah. This rosé is sweet, fruity and juicy with wild strawberries, cherry jam and light peppery spice. The finish has a hint of orange blossom. Food pairing – apps, snacks and lean fish.

Oyster Bay Rosé from cool climate Marlborough, New Zeland is made with 100% pinot noir grapes. Oyster Bay Rose features summer cherry and fragrant blossom notes, with a burst of red berry and a lively citrus zest. Rosé is a versatile food friendly wine, ideal as an apéritif, but just as good enjoyed with shellfish. Ready for a sunny deck.

1 cup full fat plain yogurt ½ cup melted butter for brushing the cooked bread 1 clove garlic, minced ¼ cup chopped fresh cilantro Combine the water, yeast and sugar in a small bowl and set aside for 5 minutes. Directions: Combine the salt and flour in a large bowl or stand mixer and then stir to combine. Add the water mixture and yogurt, then mix the dough together. Knead the dough for 5 minutes, add a little extra flour if the dough is very sticky. Transfer the dough to an oiled bowl, cover with plastic wrap and let it rise for one hour in a warm place. Turn the dough out onto a floured surface and cut it into 12 roughly even pieces.Use your hands to stretch the dough into a roughly round shape about 8 inches across and about ¼ inch thick. Place the doughs on a baking sheet and cover the sheet lightly with plastic wrap while the grill warms up. Preheat your grill to 450F or High, brush the grill to remove any debris and oil it well. Combine the garlic, remaining butter and the cilantro in a small pot and warm gently until the butter melts completely.

2 small (about 6 inch) whole eggplants Juice and zest of one lemon 1 Tbsp olive oil 1 Tbsp minced garlic Salt and pepper to taste ½ cup thick sour cream or greek yogurt ¼ tsp cumin ¼ tsp cinnamon Pinch or two of ground cloves ⅔ cup of pomegranate arils (from about ½ a pomegranate) ¼ cup chopped fresh flat-leaf parsley

Directions: In a small mixing bowl, stir together the yogurt and lemon juice. Add the spices and minced garlic, and whisk until you have a smooth, thick marinade. Put the chicken halves or legs in a large zip-lock bag, and add the marinade to the bag. Zip closed and knead the bag until the chicken is well-coated with marinade. Open bags slightly, squeeze out most of the air, and zip closed again. Refrigerate for 12-24 hours. Pre-heat your grill to 400F, remove the chicken from the marinade and then wipe the majority of the marinade off. Locate a 9 x 13 casserole that will fit on top of the grill once the lid is closed and set aside. Oil your grill generously, then place the chicken halves, skin-side down, directly on the grill. Cook for 5 minutes, then turn it over and cook another 5 minutes.

FLORAL COCKTAILS

Directions: Preheat your grill to 400F. Combine the lemon juice, oil, garlic, spices and salt and pepper in a small bowl. Cut the eggplants in half lengthwise and then use a sharp paring knife to score the flesh in a crosshatch pattern about 1 cm deep. Brush the cut sides of the eggplant halves generously with the oil mixture and let stand for about 10 minutes. Place the eggplant cut side down on the grill and cook for about 4 minutes, until the outsides are just begin- ning to char. Turn the eggplants over and cook another 2 minutes, until they are softened but not falling apart. Transfer the cooked eggplant to a serving platter and top with the yogurt, pomegranate seeds and a sprinkle of fresh parsley. Enjoy right away!

Place the chicken in the prepared casserole, place the casserole on the grill, then turn the grill down to 300F and close the lid. Cook for another 20 to 25 minutes, or until the leg meat is no longer pink in the centre and juices run clear when pierced with a knife.

Directions: In a cocktail shaker full of ice, combine the vodka, Disaronno, orange juice and a little lemon. Shake well for 30 seconds, then strain into a chilled martini glass.

Strawberry Lemonade Upside Down Cake From page 39

For the topping: 1/2 cup sugar 2 Tbsp cornstarch 4 cups fresh strawberries, hulled and cut in half 1 tsp vanilla extract

For the cake: 2 cups all-purpose flour 1 Tablespoon baking powder ¼ tsp salt 4 large eggs, at room temperature 1½ cups sugar ½ cup butter, melted ½ cup vegetable oil 1 cup buttermilk, at room temperature 1 tsp pure vanilla extract Zest of one lemon

Directions: Gather 6 x 4oz (½ cup) ramekins and set them in a 9x13 inch baking pan. Measure the water into a small bowl and then gently stir in the gelatin. Let the gelatine mixture sit while you prepare the cream mixture. In a medium saucepan with a thick bottom, combine the buttermilk, cream, sugar, vanilla pod and seeds. Heat over medium, stirring constantly. Bring to a simmer, then remove from heat and stir in the lemon juice and zest. Stir in the gelatin mixture and whisk well until everything is dissolved. Strain the mixture into a measuring jug, then divide the mixture between the 6 ramekins. Transfer the tray of panna cottas to the fridge to cool for one hour. Wrap tightly with plastic, then let chill for another hour. Make the strawberry topping by mixing together the sliced strawberries, sugar, balsamic vinegar and cracked pepper. The panna cottas can be served in the ramekin topped with fresh berries, or they can be un-moulded by briefly dipping the ramekin in hot water, running a paring knife around the outer edge of the panna cotta and then inverting the ramekin onto a dessert plate.

Wild Rose Spritzer From page 27 Makes 1

Stir it well to combine, then garnish with a rose petals or fresh rosehips.

Directions: Grease and flour a 10 inch round cake pan very well and preheat your oven to 350 degrees F. Mix the cornstarch and 1/2 cup sugar together and sprinkle over the strawberries along with the 1 tsp vanilla extract. Toss together well and spread evenly into the bottom of the prepared pan with the cut sides of the strawberries facing down. Prepare the cake batter begin by sifting together the flour, baking powder and salt in a small bowl. Set aside.

GRILLED SUMMER SALADS

1/2 teaspoon chili powder, plus more for serving 1 medium clove garlic, finely minced (about 1 teaspoon) 1/4 cup finely chopped cilantro leaves and tender stems 1 lime, cut into wedges A little extra cheese and chili powder for garnish Directions: Turn your grill to 450F and preheat it for 5 minutes. While the grill heats, combine the mayonnaise, sour cream, cheese, chili powder, garlic, and cilantro in a large bowl. Stir until combined and set aside. When the grill is hot, place the shucked corn directly on the grill and cook, rotating occasionally, until cooked through and charred a little bit on all sides, about 8 minutes. Transfer the cooked corn to a cutting board and let it cool for about 5 minutes. Use a sharp knife to cut the corn kernels from the cob, then place the warm corn kernels in a medium bowl. Add the sour cream mixture and stir well to combine. Scoop the corn salad into serving bowls and garnish with more crumbled cheese, a sprinkle of chili powder and a lime wedge. Be sure to enjoy this salad right away while it’s still warm.

In the bowl of an electric mixer, beat together the oil, butter, eggs, sugar at high speed until very foamy. Stir the vanilla extract into the buttermilk along with the lemon zest. Fold the dry ingredients into the egg mixture al- ternately with the milk mixture. Pour the batter over the strawberries in the baking pan. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean. Cool in the pan for about 10 minutes before inverting

Grilled Peach and Prosciutto Salad with Mozzarella From page 51 Serves 2 as a main, 4 as a side

2 large ripe (but not too soft) peaches 8 pieces of thinly sliced prosciutto (about 100g) 1 tub of bocconcini cheese 2 big handfuls of fresh baby arugula 2 Tbsp extra virgin olive oil 1 Tbsp nice dark balsamic vinegar Flaked sea salt and pepper Directions: Preheat your grill to 400F. Cut the peaches in half, remove the stone and pat the cut sides dry with a paper towel. Grill the peaches for about 3 minutes on each side, until they are lightly charred around the outside, then transfer to a cutting board to cool slightly while you prepare the remaining ingredients. Slice the bocconcini balls in quarters, then scatter them on a serving platter. Slice the peaches into large chunks and add them as well. Tear the prosciutto slices in half and add that to the platter along with the arugula. Finally, drizzle over the olive oil and balsamic and add a generous sprinkle of flaked sea salt and freshly cracked pepper. Enjoy right away.

Strawberries and Cream No-Churn Ice Cream From page 40

1 heaping cup sliced fresh strawberries 1 can sweetened condensed milk 1 Tbsp vanilla extract ¼ tsp salt Juice and zest of ½ a lemon 2 cups very cold whipping cream (35%)

Grilled Halloumi and Watermelon Salad with Citrus and Mint From page 53 Serves 2 as a main, 4 as a side 1 field cucumber, peeled and sliced ¼ of a small watermelon, peeled and cut into bite-sized pieces 1 package (about 200g) halloumi cheese

Directions: Combine the strawberries, condensed milk, vanilla, salt, and lemon together in the bowl of a blender or food processor. Blend until very smooth, scraping down the sides of the blender as necessary to make sure there are no lumps. In a separate bowl or with a stand mixer, beat the whipped cream with a whisk until it is fluffy and makes stiff peaks. Add half the strawberry puree to the whipped cream and fold it in slowly until it’s barely combined, then add the remaining puree and stir very gently until the mixture is smooth. Be careful not to overmix it! Spread the ice cream mixture into a shallow casserole dish and freeze for 2 hours. Give the mixture a stir with a spatula about halfway through. Once the mixture is frozen, wrap it very tightly and enjoy within two weeks.

Directions: Preheat your grill to 400F and arrange the melon, cucumber and red onion on a large platter or on 4 small plates. Make the vinaigrette: whisk together the lemon, mint, garlic, oregano and olive oil in a small bowl and season generously with salt and pepper. Cut the halloumi into ¼ inch thick slices, then place the slices on the hot grill. Cook for about 3 minutes on each side, then add the grilled cheese to the salad platter. Drizzle the vinaigrette all over and serve right away.
