Foodservice Activities 1st Culinary Contest of Real California Milk in Mexico

Imalinx carried out the annual contest of Real California Milk with the aim to involve and develop culinary professionals of Mexico into the California Dairy world. The objective is to make the young chefs of Mexico fall in love of Real California Milk so they can spread the word about the wonderful benefits of including California Dairy in their daily consumption, not only because of their deliciousness but also for their efficient use in the kitchen as well as the health factor. The annual competition took place on November 24 th at one of the most important culinary institutes of Mexico, the Higher Educational Center of San Angel (CESSA). The University of CESSA is a unique educational center specialized in the hospitality and food industry in Mexico with more than 40 years of experience. A total of five teams registered for participation in the first culinary contest of RCM in Mexico. Each team included one chef with more than five years of experience and a sous chef with five years of experience or less. The participants had to develop a two-meal course, a main dish and dessert, with a surprising basket of Mexican ingredients. Each team had to incorporate at least four California dairy ingredients in each dish. They had the following list of ingredients from the Real California Milk basket available: • Whole Milk from Rock View • Unsalted butter from CDI • Vanilla ice-cream from Kirkland • Mozzarella cheese from Pacific Cheese • Monterey Jack cheese from Pacific Cheese • Pepper Jack cheese from Pacific Cheese • Cheddar cheese from Pacific Cheese • Provolone cheese from Pacific Cheese • Gouda cheese from California Premium The five teams that participated are currently working in gourmet restaurants, own their restaurant or bakery, and/or work for culinary institutions. The winners are part of the work team of “Balcon del Zocalo” a gourmet restaurant of Mexican food own by the chef Pepe Salinas in Mexico City.
