Turnip and Cow’s Cheddar Gratin

INGREDIENTS 1 medium turnip, peeled, quartered and sliced in 1/8 inch thick slices 1 cup (packed) shredded Aged Cow’s Cheddar (Extra Old or 1 year) 1 ½ cups heavy cream ¼ tsp nutmeg Salt and pepper DIRECTIONS Preheat your oven to 350F. Line a 9 x 13 inch casserole with parchment paper. Mix the nutmeg with the whip- ping cream together. Divide the turnip into 3 roughly even piles. Layer ⅓ of the turnip slices in the bottom of the casse- role so that they slightly overlap to form an even layer. Drizzle with about ¼ of the cream and ¼ of the cheese, then season with a little salt and pepper and a few thyme leaves. Repeat until all the turnips are used. Finish by drizzling cream and cheese on top of everything.

Bake for 1 to 1 ¼ hours, or until the turnip is very soft. Add a little extra fresh thyme for a garnish.
