Apple and Currant Braised Red Cabbage

INGREDIENTS ¼ cup butter 2 Tbsp brown sugar 3 Tbsp red wine vinegar ½ tsp cinnamon ¼ tsp ground cloves

1 medium red cabbage, cored and shredded 2 cortland apples, cored and cut into chunks ½ cup Riverview Country Market red currant jelly Salt and pepper DIRECTIONS In a large stock pot over medium heat, bring the butter, sugar, vinegar and spices to a simmer.

Add the cabbage and apple and stir well to combine.

Cook uncovered, stirring occasionally, for about 45 minutes, or until the cabbage is soft but not mushy. Stir in the red currant jelly and then season to taste with salt and pepper. Enjoy warm as a side with your Christmas dinner!
