CHEF AARON'S COOKING TIP How to Bl anch Vegetabl es

Summer is here and the bounty of local produce in Georgia is available in abundance. I am always looking for ways to incorporate fresh vegetables into all of my recipes and it is always helpful to have six quick steps to blanch vegetables – it works for beans, carrots, beets, corn, snap peas, squash, Brussel sprouts, asparagus, broccoli; you name it PLUS it helps to preserve color and texture. Chef’s Six Steps to Blanching Veggies: Bring a pot of water, seasoned with plenty of kosher salt, to a rolling boil Have ready a large bowl of ice water (known as an ice bath) and a plate lined with a cloth or paper towel for draining Make sure to cut your vegetables in uniform pieces to ensure even cooking Add the vegetables to the pot in small batches to maintain a rolling boil. If blanching more than one type of vegetable, blanch each one separately Blanch quickly and do not overcook. Start checking for doneness after thirty seconds by taking a piece, dipping it in the ice bath and then tasting. Keep tasting every 30-60 seconds until the vegetables are cooked to your liking. Most vegetables take between 2-5 minutes. Once cooked to your liking, place vegetables in ice bath. Make sure to drain the vegetables well before serving, adding to another recipe, or freezing for future use. Blanching (scalding vegetables in boiling water or steam for a short time) is a must for almost all vegetables to be frozen. It stops enzyme actions which can cause loss of flavor, color and texture. Blanching cleanses the surface of dirt and organisms, brightens the color and helps prevent loss of vitamins. 1. 2. 3. 4. 5. 6.

TEE TIME RESERVATION SYSTEM In an effort to create a tee time reservation system which is fair and equitable for all members and efficient for our staff, Horseshoe Bend CC Management chose to proceed with an electronic lottery system. All modifications, cancellations, and/or updates to a tee time must be made online, by the member, and may be completed only after the tee sheet is posted and prior to 24- hours before your start time. 2019 MEN'S CLUB CHAMPIONSHIP RESULTS Congratulations to our 2019 Men’s Club Champion, Mr. Scott Stevens! We had 11 players in the Championship Flight of the Men’s Club Championship. Those players played two rounds of stroke play last Friday and Saturday trying to advance into the match play portion of the tournament.  Our four finalists were Mr. Morgan Campbell (147), Mr. Robert Crean (149), Mr. Scott Stevens (149), and Mr. Matt Berndt (151). The match play portion of the competition saw our #4 seed, Mr. Matt Berndt, defeat our #1 seed, Mr. Morgan Campbell, on the 18th hole. Mr. Robert Crean, fell to Mr. Scott Stevens in their match leaving Stevens and Berndt to battle it out for the Championship. Mr. Berndt was up 2 going into the back 9 as a gallery began to follow their match.  The match would go back and forth throughout the back 9, until the players arrived on the 18th tee box all square. Both players were looking at birdie putts on the 18th green. Berndt would putt first and had the line the entire time coming up just short with a tap in par. Stevens drained his putt winning the match and his first Club Championship!    We had a total of 11 plyers in the Flighted division of the Club Championship, who also played two rounds of stroke play on Friday and Saturday.  Those players were split into two flights based on handicap. In the 1st Flight (Blue Tee) our top 4 players were Mr. Stephen McDonnold (151), Mr. Michael Sayre (160), Mr. Rusty Robison (164) and Mr. Todd Fierman (179).  Mr. Stephen McDonnold would defeat Mr. Michael Sayre in the final match to capture the win in the 1st Flight. The top 4 in the 2nd Flight (White Tee) were Mr. Leonard Theis (173), Mr. Garry Swearingen (174), Mr. Pete Stemniski (182) and Mr. Avery Wood (183).  Mr. Avery Wood won the 2nd Flight defeating Mr. Pete Stemniski in the final match.

Thank you to all who participated in this year’s Men’s Club Championship!

TENNIS TIP By Luke Burden, Director of Athletics

What tension should I string my racket at?

In addition to the type of string, the tension that you string your racket is very important and can make a huge difference. Each racket will have a specific tension range, however the tensions through-out this range will allow the racket to perform very differently. In general, a higher tension will offer more control and a lower tension will offer more power. To begin we recommend to start in the middle of the range and then adjust from there. Contrary to what most people believe, breaking a string isn’t the only time you should restring your racket. For most players, a good rule of thumb is to have your racket restrung as many times in a year as you play in a week. For example, if you play 4 times a week, you should get your racket restrung 4 times per year. You may have noticed that even though your strings have not broken, they may feel as though you have no power, or feel “dead”. This is because over time the string will have lost tension and will effect play-ability. When should I get my racket restrung?

Restringing Your Racket

With many players taking a break or playing less over the summer period, we are all getting ready for a busy fall season. When we talk about getting ready for the season, everyone looks to improve their forehand or backhand or maybe even change their racket, however one of the most important aspects and one that is usually overlooked is the racket strings. Over the last 15 years they greatest advancement in technology has been to do with tennis strings. Are you taking advantage of this?

What type of string should I use?

There are four main types of strings with their different advantages and disadvantages:

Polyester Upsides: Durable. Lots of control. Lots of spin. Downsides: Harder of the arm. Loses tension faster Multi-filament Upsides: Great play-ability. Softer on the arm. Very good tension maintenance. Closest thing to natural gut. Downsides: Less control oriented. Doesn’t offer the solid feel some players like. Lacks durability for bigger hitters. Synthetic Gut Upsides: Economically priced. Downsides: Average overall performance and play- ability. Not extraordinary in any category. Natural Gut Upsides: Optimum play-ability. Holds tension the best. Easy on the arm. Play ability even at very high tensions. Downsides: High priced. Effected easily by weather.
