BOURBON–MINT GLAZED LAMB RACK
Serves: 4 Time: 40 min.
DIRECTIONS Combine rosemary, thyme, garlic and Italian flat leaf parsley and mix together. Rub the lamb all over with oil. Sprinkle the garlic / herb mixture over the lamb. Add salt and fresh cracked black pepper to season to your taste. Rub the seasonings in. Let sit. Preheat the oven to 400°F. Heat a large iron skillet. Transfer the lamb to the heated skillet. Roast the lamb for 20 minutes or until a thermometer inserted • ½ cup bourbon – Maker’s Mark recommended • 1 Tbsp. oil • 2 racks of lamb • 2 Tbsp. finely chopped fresh rosemary leaves • 1 Tbsp. finely chopped fresh thyme
diagonally into the rack’s center reads 120°f (for medium-rare). Remove from oven, cover with foil, and allow to stand 5 to 10 minutes. Bring the bourbon to boil and continue the boil until reduced by half. Add the jelly and vinegar. Adjust the heat to maintain a simmer, stirring occasionally, until the vinegar burns off and the jelly is melted. Cut the lamb into chops. Sprinkle the mint leaves on top and serve with the bourbon mint sauce. • 2 Tbsp. finely chopped Italian flat leaf parsley • minced garlic to taste – about 3 large cloves recommended • kosher salt and freshly ground black pepper • ½ cup mint jelly • 2 Tbsp. white wine vinegar • 2 Tbsp. fresh mint leaves, torn
Recommended sides: Rosemary roasted whole new potatoes and creamed baby spinach.
THE SAZERAC Serves 10 • 4 cups (32 oz.) Bulleit Rye Whiskey • ½ oz. absinthe • ½ tsp. orange bitters • ½ cup (4 oz.) orange simple syrup* • 10 strips orange peels Combine rye, absinthe, bitters, simple syrup, and 1 cup filtered water in a large bowl or pitcher. Cover and chill for at least 2 hours or overnight. To serve, ladle into coupe glasses and garnish each with an orange peel.
*ORANGE SIMPLE SYRUP Combine ½ cup granulated sugar, ½ cup water, and the peel of one orange in a medium saucepan. Bring to a simmer and stir to dissolve sugar. Remove pan from heat and cool completely. Strain syrup through a fine mesh sieve and discard the orange peel. Refrigerate in a covered container for up to 2 weeks. Makes ½ cup.

In an old fashioned or short rocks glass, add sugar, bitters, and half a splash of water. Muddle with a spoon until the sugar is dissolved. Add whiskey and one large ice cube (or several smaller ones) and stir well. Twist the citrus peel to release the oils and run it around the rim of the glass, then drop it into the cocktail.

CELEBRATE MORE! HOW TO READ A BOURBON LABEL Next time you visit Colonial, head for the Bourbon aisle and take a look at a bottle. What’s on the label, and what’s not on the label, can help you decide whether the Bourbon inside matches your tastes. Here are a few tips on deciphering what you read. We’ll use three of Old Grand Dad’s Bourbons for our demo.
1. PROOF , or alcohol by volume, determines a lot about the juice inside the bottle: flavor profile, mouth feel, aroma and overall strength. Distillers can’t legally sell 100 percent alcohol as Bourbon, so they dilute it with water to the desired ratio. The proof changes slightly while the Bourbon is in the barrel and some evaporation occurs. Old Grand Dad Kentucky Straight Bourbon Whiskey = 80 proof (40 percent alcohol) Old Grand Dad Bottled in Bond = 100 proof (50 percent alcohol) Old Grand Dad 114 = 114 proof (57 percent alcohol)
2. MASH BILL tells you the type of grain the Bourbon is made of. To be Bourbon, whiskey has to contain between 51 and 80 percent corn; distillers augment the corn with various amounts of malted barley, wheat and/or rye, This Bourbon has the phrase “high rye” (although no percentage is stated.) It’s fair to say that Old Grand Dad would be a good choice if you like a spicy dram. 3. STRAIGHT BOURBON WHISKEY is a good substitute phrase for an age statement, which many labels don’t have. Straight Bourbon must be aged no less than two years in new charred oak barrels. 4. BOTTLED IN BOND BOURBON is required to age at least four years, using the same ingredients
and aging methods as other Bourbons. It has to be the product of one single distillery and one distilling season.

• Mezcal rinse • 2 oz. Pikesville rye whiskey • 1 oz. fresh pink (or red) grapefruit juice
• ½ oz. fresh lime juice • ½ oz. sage simple syrup* • 2 dashes Angostura bitters • ice
DIRECTIONS Rinse a chilled coupe with the Mezcal and pour out the excess. Fill a mixing glass with ice. Add all ingredients except the garnish and stir well for about 45 seconds until the glass is frosted. Strain into the prepared coupe and garnish with the grapefruit twist.
*SAGE SIMPLE SYRUP Bring 1 cup sugar, 1 cup water and ½ cup roughly chopped sage leaves to boil over medium high heat, stirring frequently.
Reduce heat and simmer for 5 minutes. Remove from heat and allow to completely cool. Strain into container, tightly cover and store in fridge for up to 2 weeks.
