DISTILLERY OVERVIEW Stonewall, an artisanal rum distilled in small batches, is produced by Pennsylvania Pure Distilleries, an independently run American distillery founded on the idea of creating exceptional spirits using locally grown ingredients and packaging. They believe in quality over quantity, which is why they make every single batch by hand. Stonewall American rum is named for the fences along property lines in early colonial American, which is noteworthy in the local lore of Pennsylvania. Rum was the precursor to whisky in the colonies; it was produced and placed in barrels for transport, creating the aging process naturally. Stonewall was designed to reflect the precursor flavor of a whisky with the butterscotch flavor of a rum. DISTILLING PHILOSOPHY The production of Stonewall is meant to mimic the original colonial production of rum as closely as possible. The mash consists of premium food-grade molasses made in Pennsylvania; water, and yeast. The rum is double distilled in Stonewall’s 1,200-liter copper pot still and is not charcoaled or filtered. Aged in new American white oak barrels with a medium char, the length of time in the barrel varies on the time of year and temperature in the distillery. Each barrel is individually tasted and blended to produce the signature taste profile. Stonewall is bottled, corked, and dipped in wax by hand.
