ONGOING Scientific Research Projects (continued) Microbial Source Tracking and Endospores in Milk The goal of this project is to improve assessments and reduce bacterial contamination of dairy processing streams. A greater number of diversity of bacteria are present in raw milk in the springtime, and research might help to explain seasonal defects in dairy foods. Products with a longer shelf-life, less spoilage, less waste, and a smaller environmental footprint will boost consumer confidence and increase demand for milk and dairy products. Researchers have already collected >100 thermoduric and endospore-forming bacterial isolates that are being verified for species identity and might be of use when confirming for spoilage/defect-causing potential. This research will benefit the dairy industry by improving methods to identify and prevent bacterial contamination that result in product losses due to defects and spoilage. This project has California-based industry partners contributing cash. Time line 2017-2018.
