In addition to the OPL, the following changes are needed to achieve its full benefits: • Teamwork vs. Working Stations : team members perform a role and support each other versus just working one station • Roles and Responsibilities : roles and responsibilities change for the Shift Manager, Production Manager, Kitchen Crew, and the Prep Person • Pick and Go : becomes the goal of the Order Assembly process used with Dual Point Service • Curated Views: managing what the customer sees and hears such as POS cords, clutter, towel buckets, garbage cans, and reducing noise levels in the kitchen This change does not happen automatically. You play an important role in helping your team make the shift. You can make this change happen by empowering your team, becoming experts, and always keeping the customer top of mind. Below are some examples: Empower Your Team: The Production Manager now has more freedom to manage and make decisions in the kitchen. Once trained, the crew can adjust UHC levels without direction from the Shift or Production Manager. Become Experts: Teach and train your production team to become experts on the OPL, in their new roles, and shared responsibilities in the kitchen. Teach and train your service team to become experts on how to assemble at the Order Assembly Table (OAT) using Pick and Go. Keep the Customer Top of Mind: Align your team around the goal of delivering the best experience to the customer that includes Gold Standard Quality food and a fast experience from happy crew members. In addition, ensure your restaurant stays clean and organized by keeping excessive stock, garbage cans, and towel buckets out of the customers view.
