The genuine Valencian paella is made with rice, rabbit, snails, chicken, a typical local bean and saffron, although variations are also per mitted, such as the seafood or mixed pa ella (with meat and shellfish), black paella and black rice… It's up to you. And just so you know what the locals are talking about, you should be aware that paella refers to the actual pan where the rice is prepared, and that socarrat is the Valencian name for the crispy rice that remains stuck to the bottom of the pan: many think this is the best part of all.
