Who can’t resist a squeaky fresh, Green County-made cheese curd? It’s time to take the roads less traveled in search of the freshest, most delectable

A quick zap in the microwave can restore the happy squeak in curds that have recently aged out of their factory-fresh moment. cheese curds. You could say that cheese curds are ‘premature’ cheese. Usually waiting 60 days or even years to age some cheese, curds are made daily to satisfy fresh curd cravings. The process to make Cheddar cheese involves running slabs of cheese through a curd mill. It cuts the slabs into peanut-sized pieces that are stirred and salted. “It takes about 15 minutes for the warm curds to absorb the salt and be ready to be scooped into forms and pressed into shape,” explained retired cheesemaker Fritz Kopp, who volunteers at the National Historic Cheesemaking Center. “Prior to being scooped, the cheesemaker would have removed some of those warm, salty curds from the vat to share with family and friends.” Cheese curds are usually Cheddar (yellow) or
