PRE-DEMO TALK Give an overview of what fermentation is:

MATERIALS REQUIRED Kilner • Kilner® Fermentation Set (0025.839) • Kilner® 34 fl oz Square Clip Top Jar (0025.511) • Kilner® Healthy Kitchen Guides to hand out (6500.107U) • Kilner® Healthy Kitchen Guide Dispenser to display guides (6505.026U) Other (no competitor brands) • 1 Sharp utility Knife (Viners) • 1 Large bowl (Mason Cash) • 1 Wooden spoon (Mason Cash) • 1 Kitchen tongs • Cleaning cloth to clean rim of jar • Paper cups (for tasting samples) • Food-safe disposable gloves (for serving samples) • Viners or wooden forks/ spoons (for tasting samples) Groceries Required • 3 Medium heads of fresh cabbage (pre-sliced will also work) • 9 tbsp Sea salt • 48 fl oz or 3 Bottles of water Notes It is recommended that you hand out samples of pre-prepared fermented food like Aunt Nellie’s Sweet and Sour Cabbage if the store permits (please check directly with the buyer or store you are demonstrating at). If you are able to hand out a sample then please ensure you have small paper cups to hold the samples and Viners or wooden forks/spoons to try with (please do not use plastic as we want to ensure we are showcasing how important reducing plastic waste is to our brand).

Explain the benefits of fermented food: • They are great for good gut health! Fermented foods are rich in probiotic bacteria so by consuming fermented foods you are adding beneficial bacteria and enzymes to your body, increasing the health of your gut and digestive system and enhancing the immune system. • Fermenting your own produce will save you money - don’t waste money on purchasing expensive premade ferments. Buy fresh seasonal produce in bulk from a farmers market or grow your own then turn it in to a delicious ferment that can last for months. • You know exactly what ingredients are in the things you and your family are eating.

• Fermentation is one of the oldest and most basic forms of preserving food. Fruits and vegetables contain natural bacteria that, when deprived of air, can inhibit the growth of other microbes that would cause spoilage. During the fermentation process, these natural bacteria convert the carbohydrates and sugars in whole food items into an acid which then becomes the ideal environment to preserve that food.

DEMONSTRATION INSTRUCTIONS Step 1 Place your thinly sliced cabbage in to your bowl and sprinkle with salt. Step 2 Using the wooden spoon bash the cabbage for around 8-10 minutes or until there is enough natural brine to cover the cabbage. Step 3 Using your kitchen tongs, pack the cabbage in to the Kilner® Fermentation Set Jar, leaving a 2.5 inch headspace and then add in the liquid. If the liquid does not cover the cabbage, create a brine solution by combining 2 tbsp Sea Salt to 34 US fl oz of water then add this to the jar. The cabbage should be completely covered by at least 1cm of the salt brine. Step 4 Add the Kilner® Ceramic Stones on top of the cabbage, ensuring all of the cabbage is submerged below the liquid. Note: The ceramic stones are designed to weigh down the cabbage and ensures the anaerobic process can begin. Step 5 Clean the rim of the jar removing any debris. Seal the jar with the lid, air lock and bung. Fill the air lock with water and advise the audience that you then need to leave the contents to ferment at room temperature for 4 – 6 weeks.

Notes Advise that after 2 weeks it is

recommended to taste the sauerkraut every couple of days until the desired taste is achieved. Once happy the sauerkraut can be transferred in to Kilner® Jars (such as the Kilner® 34 fl oz Square Clip Top Jar) and stored for one month in the fridge.

SPIRALIZER JAR ITEM 0025.815 RECIPE VEGGIE NOODLES TOTAL DEMO TIME 10 MINUTES PRE-DEMO TALK • Mention how the Spiralizer offers an easy way to create spaghetti style ribbons from a variety of hard vegetables - a lighter alternative to pasta or to add interesting texture to salads and other meals. • Talk about the gadget being easy to use, the jar and attachment being dishwasher safe and compact enough to easily store in the kitchen. • Point out that the spiralized vegetables are collected in the jar below and the set includes a spare lid so that the jar can be used to store and transport the contents. DEMONSTRATION INSTRUCTIONS Step 1 Wash your zucchini. Cut the ends and any wide edges from the vegetable to ensure that they can fit into the Spiralizer. Step 2 Spiralize the zucchini in to the jar. Step 3 Once spiralized, show how the lid can be screwed on top of the jar and the jar can be stored in the fridge or easily transported. Advise that the spiralized zucchini can be added to salads or eaten as an alternative to pasta with Bolognese or Pesto.

MAYONNAISE AND SAUCE JAR SET ITEM 0025.003 RECIPE HOMEMADE MAYONNAISE TOTAL DEMO TIME 20-25 MINUTES

PRE-DEMO TALK • Explain that the Mayonnaise Jar Set allows you to easily make delicious homemade mayonnaise, vegannaise, aioli or salad dressings at home in under 10 minutes. • Show that the set comes with a Kilner Jar and two piece sealing lid in order to store homemade creations. • Explain how important it is to know what’s going in to your food and making homemade is the best way. There are often plenty of hidden and unwanted ingredients such as salt, sugar and preservatives in condiments and sauces! DEMONSTRATION INSTRUCTIONS Step 1 Slice your lemon in half and juice using the Juicer Jar Set. Place the juice to one side. Step 2 Unscrew the screw band and take the mesh plunger out of the jar. Step 3 Add the egg, mustard, vinegar, salt and pepper to the jar and screw the oil dish in place with the plunger inside and the screw band tight. Step 4 Gently use the plunger to mix the contents within the jar. Step 5 Once this has mixed together, very slowly, drizzle half of the oil from the Kilner® Pouring Bottle into the dish whilst moving the plunger up and down. Continue to move the plunger up and down at all times whilst the oil drizzles through the lid.

MATERIALS REQUIRED

• Making homemade sauces allows you to control the flavor to match your personal taste preferences. For example, you can add 1 tsp of Harissa or Chipotle Paste to this recipe at the end of the process for extra flavoring.

Kilner • Kilner® Mayonnaise & Sauce Jar Set (0025.003) • Kilner® Juicer Jar Set (0025.842) • Kilner® Pouring Bottle (0025.884) • Kilner® Healthy Kitchen Guides to hand out (6500.107U) • Kilner® Healthy Kitchen Guide Dispenser to display guides (6505.026U) Other (no competitor brands) • Paring Knife (Viners) • Cutting board • Measuring Spoons (Mason Cash) • Measuring Cups (Mason Cash) • 1 Whole egg • 1 tsp White wine vinegar • 1 tsp Dijon mustard or mustard powder • ½ tsp Salt • Pinch of black pepper • 300ml / 1¼ cup sunflower or vegetable oil (from Kilner® Pouring Bottle) • 1 tsp Lemon juice (lemon juiced using Kilner® Juicer Jar Set) Groceries Required

Step 6 Once you’ve added about half the oil, pour 1 teaspoon lemon juice into the dish – this will loosen the mixture slightly and give it a paler color. Step 7 Continue to use the handle and drizzle the remaining oil then plunge the mixture until you are happy with the consistency. Step 8 Unscrew the lid and take the handle out. Use the screw band and metal sealing disk to store your mayonnaise freshly in the refrigerator. Store and consume within 1 week.

BUTTER CHURNER ITEM 0025.348 RECIPE CINNAMON HONEY BUTTER TOTAL DEMO TIME 20 MINUTES PRE-DEMO TALK • Explain how easy it is to make homemade butter in as little as 8 minutes with the Kilner® Butter Churner. • Talk about how exciting it is to make your own butter in a traditional way and how you can get kids involved in cooking with the Kilner® Butter Churner. • Mention how you can flavor the butter with whatever ingredients you’d like. • Share how important it is to know and control the ingredients in your food and link this to our Kilner® Healthy Kitchen Guide (filled with recipes for your health & well-being). DEMONSTRATION INSTRUCTIONS Step 1 Pour cream into Butter Churner and replace the lid. Turn the handle to start the churning process. After 8-10 minutes the cream will separate to form butter and buttermilk. Step 2 Remove the lid from the churner and pour the buttermilk into the Wide Mouth Kilner Jar. Share that the leftover buttermilk can be used to make scones or pancakes. Step 3 Scrape the butter into a bowl and wash it with the water. You’re washing the residual buttermilk, as the more thoroughly you rinse, the longer your butter will last Step 4 Once the butter is washed, squeeze the excess water out with the paddles and pour it off in to your second bowl or in to the sink. Wipe the bowl dry after squeezing out/pouring off the water then place your butter back in to the dry bowl. Step 5 Add honey, cinnamon and salt to the butter and mix. Step 6 Mold the butter into a square shape and transfer it to the butter dish. Explain that fresh butter can be stored for up to two weeks in the refrigerator.
