Labor Day Club Schedule September 3rd & 4th Please note that to accommodate the Labor Day holiday weekend schedule, the Club will be open for lunch on Monday, Sept. 3rd from 11am - 3pm, then closed on Tuesday, Sept. 4th. The pool will be open for normal operating hours on Labor day, 11am - 8pm. The pool will close for the season after Labor Day. Outings Coming Up Attention Members: We have two outings sponsored by members scheduled in September. Friday, September 14th (2pm shotgun start), Horseshoe Bend Members are welcomed to play at GCOG for a cart fee of $25. Tee times must be made through the Golf Shop no earlier than Wednesday, September 12th. The second outing is scheduled for Friday, September 21st (2pm shotgun start). Unfortunately, GCOG will be closed for their Men’s Member Guest Invitational, therefore Horseshoe Bend will have a limited number of tee times available in the morning and will be closed for member play for the rest of the day. To register for a tee time or for any questions, please contact the Golf Pro Shop at 770.992.2310.

Pan Seared Duck with Red Chile Pear Sauce, Bourbon-Brown Sugar Asian Pear Relish and Potato-Blue Cheese Cakes

1 Duck Breasts:

Red Chile Pear Sauce: 2 tablespoons olive oil 1 large red onion, finely chopped 1 cup dry red wine 8 cups homemade chicken stock 2 whole New Mexican Red chiles 1 cinnamon stick 2 star anise 3 pears, peeled, seeded and halved 2 tablespoons cold unsalted butter Salt and freshly ground pepper Asian Pear Relish: 3 Asian pears, peeled, seeded and diced 1/2 cup bourbon 2 tablespoons light brown sugar

Preheat oven to 400 degrees F. Heat a large sauté pan over medium-high heat. Season the duck with salt and pepper on sides and cook skin-side down until golden brown. Drain the fat and turn the breast over and continue cooking in the oven to medium-rare (about 4 to 5 minutes). Place 2 Potato-Blue Cheese Cakes on the plate. Place one duck breast on top of the potato cakes, and drizzle the Red Chile Pear Sauce around the plate and on the ends of the duck breasts. Place a few teaspoons of the Asian Pear Relish on top of each of the duck breasts. 2 cups cold mashed potatoes 1/4 cup panko bread crumbs, plus extra for coating 1/2 cup crumbled domestic blue cheese Salt and freshly ground pepper Panko crumbs, for dusting 1/4 cup olive oil Combine the potatoes, bread crumbs and blue cheese in a medium bowl. Season with salt and pepper to taste. Form the mixture into eight 2-inch cakes. Chill in the refrigerator for 30 minutes. Dredge the cakes lightly in more panko crumbs. Heat the oil in a large sauté pan over high heat. Cook the cakes until golden brown on both sides.  Potato Cakes:

For the Red Chile Pear Sauce: Heat oil in a large saucepan over medium-high heat. Add the onion and cook until soft. Add the wine and cook until reduced. Add the stock, chiles, cinnamon, anise, and pears, and cook until reduced by 1/2. Strain the sauce into a clean saucepan and cook to a sauce consistency. Remove from the heat and whisk in the butter and season with salt and pepper to taste. Sauce can be gently re- heated, but cannot boil or the sauce will break. For the Asian Pear Relish: Heat a medium saucepan over medium-high heat. Add the pears and cook until lightly golden brown. Remove the pan from the heat, add the bourbon and sugar and cook until the pears are lightly glazed.

Too many golfers are given a wrong idea about the golf swing. The idea is a double whammy — it makes the swing unnecessarily complicated and produces poor shots. The wrong idea is that we should use our hands during the swing to scoop the clubhead under the ball. As can be seen in the photos, when we scoop with the right hand, we effectively shorten the club. Now instead of the leading edge of the club brushing the grass under the ball, the leading edge is elevated and contacts the ball at the equator and we skull the shot. Or, you can do as I’m doing in the lower photo, drop the right shoulder and reverse pivot to lower the club so it goes under the ball. However, when you do this the clubface has so much loft that the ball pops up and does not carry the needed distance. You can see in the photo how the ball has too much loft and therefore not enough carry—a typical fluffed shot. The solution to skulled and fluffed shots is to simplify your swing. Make the swing without the scooping action. Improvements in a golf swing mean changes, and changes mean finding a way to do something differently from your habit. I will give you two ways to make the change quickly. First, with no ball, over a period of a week make 100 swings in sets of 10 from three feet before the address (backwing) to three feet after the address (follow-through). Second, use a metal coat hanger to make a small soccer goal about eight inches tall and place it about three feet in front of you (see lower photo at right). Using a 7-iron, make “no scoop” swings with the intention of rolling the ball under the soccer goal. When you do you will feel very solid contact and the loft of the club will propel the ball over the top of the goal —but your intention is to roll it under. This “no-scoop” swing is the action that will optimize your swing for all your clubs. Watch the players on tour. You will see swings with a lot of variation. However, you will not see any player using a scooping action — it’s unnecessarily difficult and it produces poor shots.

The pickleball club championships are here!!! We are excited about the Inaugural HBCC Pickleball Club Championships to be held over the month of October. Teams will set up their own times to complete the scheduled matches in their draws. Finals will be held on Friday October 26th. Cost to participate is $10 per player. Start looking for your partner now! Final day to register is September 28th. Pickleball Club Championships Month of October – Finals October 26th Horseshoe Bend CC embraces its special function as a family club, and therefore asks everyone’s careful attention to our rules governing children. Children under the age of 12 are not permitted in the Athletic Center unless accompanied by an adult. Children 12 and over ARE permitted in the Athletic Center and will be afforded all the services of the Club and are held to the same standards of behavior as any member’s guest. Any behavior problems may result in the loss of Club privileges. Children under the age of 12 must be accompanied by an adult. The pool and tennis staffs are not responsible for babysitting or “parenting” members’ children. The Vantage Point Bar area is for adults over 21 years of age only. Children under 21, when accompanied by an adult, are permitted in the bar. Please continue to be mindful of the landscaped areas around the pool, tennis courts, and facility. What tension should I string my racket at?

In addition to the type of string, the tension that you string your racket is very important and can make a huge difference. Each racket will have a specific tension range, however the tensions through-out this range will allow the racket to perform very differently. In general, a higher tension will offer more control and a lower tension will offer more power. To begin we recommend to start in the middle of the range and then adjust from there. Contrary to what most people believe, breaking a string isn’t the only time you should restring your racket. For most players, a good rule of thumb is to have your racket restrung as many times in a year as you play in a week. For example, if you play 4 times a week, you should get your racket restrung 4 times per year. You may have noticed that even though your strings have not broken, they may feel as though you have no power, or feel “dead”. This is because over time the string will have lost tension and will effect play-ability. When should I get my racket restrung?

Restringing Your Racket

With many players taking a break or playing less over the summer period, we are all getting ready for a busy fall season. When we talk about getting ready for the season, everyone looks to improve their forehand or backhand or maybe even change their racket, however one of the most important aspects and one that is usually overlooked is the racket strings. Over the last 15 years they greatest advancement in technology has been to do with tennis strings. Are you taking advantage of this?

What type of string should I use?

There are four main types of strings with their different advantages and disadvantages:

Polyester Upsides: Durable. Lots of control. Lots of spin. Downsides: Harder of the arm. Loses tension faster Multi-filament Upsides: Great play-ability. Softer on the arm. Very good tension maintenance. Closest thing to natural gut. Downsides: Less control oriented. Doesn’t offer the solid feel some players like. Lacks durability for bigger hitters. Synthetic Gut Upsides: Economically priced. Downsides: Average overall performance and play- ability. Not extraordinary in any category. Natural Gut Upsides: Optimum play-ability. Holds tension the best. Easy on the arm. Play ability even at very high tensions. Downsides: High priced. Effected easily by weather.

KIDS NIGHT OUT  SATURDAY, SEPTEMBER 8TH

Looking for some quality Mom and Dad time without the kids?  Sign the kids up for HBCC’s Kids ’ Night Out , then make an adult-only dinner reservation for the Grandstand Tavern. Kids Night Out will be held at the Tennis and Swim Clubhouse on Saturday, September 8th from 5pm- 9pm. Lots of fun and activities are in store for kids ages 5-12 years old. Dinner will be provided. Reservations are a must for this popular event ! Price per child is $21.95. Reservations can be made through the member portal on the HBCC website. Cancellations after September 5th will be charged.

VIDEO GAME & PIZZA NIGHT FRIDAY, SEPTEMBER 28TH  Drop the kids off for an evening of fun and friendly competition. Game carts will be provided by Xtreme Gaming 360 from 6-9pm. Gaming carts allow gamers to play with or against all their friends , each with their own High Definition screen! Cost for this fun evening is $12.95 per person and includes pizza and a drink. Reservations are highly requested and can be made through the member portal or by calling the Main Clubhouse at 770-992-2310.
