The Essentials

I t’s very simple. Not all calories are equal. Not all fats are equal. Not all proteins are equal. Your body doesn’t treat all sugars and starches the same way. Vitamins and minerals need to work together in the right combinations to work at all, and if the minerals are in the wrong form, you won’t be able to use them. Chalk is full of calcium. But you could eat a ton of chalk and not get any calcium whatsoever. In the same way, milk is full of calcium, but when you pasteurize it, the chemical struc- ture of the calcium changes. It becomes “denatured” and virtu- ally unassimilable. Starvation for essential nutrients may occur for many reasons, not all of them obvious. We all need proteins, carbohydrates, and fats. If you’re over- weight, you might be thinking, “Isn’t too much fat already one of my problems?” More likely, your problem is you’re getting too little of the right kind of fat. You need to eat more of the correct types of fats, proteins, and carbohydrates. If most of the foods you eat are processed and not live, you become chronically deficient in essential fatty acids, amino Just because you put it in your body doesn’t mean that it ends up in your cells.
