Frying Oils When you heat oil to frying temperature, you usually destroy any of the beneficial properties of the oil. However, some oils are better than others for cooking. The best ones are organic butter, olive oil, and coconut oil. Coconut oil is a saturated fat, but it is a “medium-chain” saturated fat. Some researchers claim that these medium-chain saturated fats (MCSFs) are actually ben- eficial for weight loss because they speed up the metabolism. 6 I don’t agree, but it is a fact that MSCFs can withstand high tem- peratures and not get corrupted, so whatever is beneficial about them will at least be preserved. Fats are just the first of the big three. Proteins are vital too. Essential Amino Acids Amino acids are the building blocks of protein. Proteins build nerves and muscle, and are essential to all bodily functions. We get protein from the foods we eat, and we disassemble the proteins to get the amino acids. It’s like taking down a wall to get the bricks; we then use these bricks to build other proteins to suit our needs. Although most of us eat plenty of protein, what you may not know is that the vast majority of the protein you eat may be unusable to your body. Just as heat and processing can destroy essential fatty acids, they can also destroy amino acids, render- ing them useless as a source of protein. Most of the sources of protein we eat come from foods that are packaged or cooked. Therefore, even though we may be getting plenty of protein, our bodies may still be starving for it because the protein is cor- rupted or denatured. Your body can’t use corrupted proteins because they are unassimilable. Like everything else, it’s not how much protein you are eat- ing that’s relevant but how much you are assimilating into the cells of your body. Corrupt proteins cannot be broken down properly. You could be eating 100 grams of protein a day, and out of the 100 grams, it’s possible that as little as fifteen grams are usable. We have to do something with the leftovers, and what usually happens is that our bodies convert the remainder
