The Essentials

Picking the right fats and proteins is of paramount impor- tance in weight loss, but don’t ignore carbohydrates either. The right carbs are essential and the wrong ones can activate the FAT Programs. Essential Sugars Researchers have only recently discovered that, just as there are essential fatty acids and amino acids, there are also essential sugar compounds. 7 These essential sugars are important because they help your body build larger molecules called glycans. Glycans help your immune system by binding to viruses and bacteria, making them harmless. They also help your cells to communicate with each other, particularly nerve and brain cells. A diet rich in unprocessed fruit and vegetables should give you all the essential sugars you need; not all of them are sweet or from sweet sources. For example: Sugars, essential or otherwise, are one form of carbohy- drate—the principle form of energy besides fat. The real issue as far as carbohydrates are concerned is what I call “dead” carbo- hydrates, especially processed grains, starches, and refined sugar. These carbohydrates do not have any usable essential nutrients. The more we eat of them, the more we starve. Dead carbohydrates are just empty calories that get stored in our fat cells. They also trick our bodies hormonally into activating the FAT Programs. 8 The worst forms of dead carbohydrates are processed bread and other wheat products, and table sugar. Fruit, on the other hand, which is also a source of carbohy- drates, is invaluable for effectively eliminating many of the most common forms of starvation that make your body want to be fat. All live fruit has essential sugars. Most fruit helps to regulate blood sugar.
