This combination—no digestive enzymes in our food and the demands from our immune system for the enzymes that our bodies must manufacture—leaves us chronically deficient in digestive enzymes. • Temperature: Besides the fact that cooking foods destroys biologically active digestive enzymes, when we eat foods that are hotter than our body temperature, our body’s diges- tive enzymes become inactive. Our enzymes were designed to be active at or around our body temperature. Hot foods are usually eaten at temperatures much hotter than our body temperature, resulting in a digestive quandary of toxic decay in our intestines and a need for much more food to get the nutrients we require. • Mental and emotional stress: Stress diverts the body’s energy and blood flow away from digestion, lowering the body’s effectiveness at producing digestive enzymes. Diges- tion is less complete when we are in a state of chronic stress. Good Bacteria, Microbes, and Digestion Another reason our digestion and assimilation is compromised is because our intestines are lacking in friendly bacteria and diges- tive microorganisms. Many years ago, the soil in which our food was grown was rich in plant-based microbes that are essential for effective digestion and assimilation of nutrients, as well as the removal of toxic waste in our digestive tracts. Pesticides, her- bicides, and fertilizers kill these bacteria. Over-farming drains the soil of nutrients and bacteria without effectively replenishing them. We then destroy the remaining beneficial microorganisms with cooking and processing. Antibiotics and chlorinated water destroy the microorganisms and friendly bacteria in our digestive tracts too. Because the foods have been stripped of beneficial bacteria, we never get a chance to replenish them. As a result, our stomachs and intes- tines get repopulated with unhealthy bacteria and fungi like yeast and candida instead.
