Food and Beverage Training Manual

Distilled from the fermented juice of sugar cane, cane syrup, or molasses. Aged in not charred barrels. Dark rums often have caramel added to them for flavor.

Rum:

Light-bodied rums:

Dry with a slight molasses flavor. Two types

are:

1) white – most popular and most easily mixed

2) gold – a mixture of light and dark rums, sweeter with a more pronounced molasses taste. Favourite light rums come from Puerto Rico and the Virgin Islands.

Heavy-bodied rums:

Darker and sweeter, with a more pungent bouquet, body and flavor. Distilled by a slower fermentation process which allows more time for a fuller, richer molasses-like body to develop. The well-known dark rums come from Jamaica, Martinique, Trinidad, Barbados.
