Inside Bar

.. Bar is Clean and Ready for next day operation (trash was taken out, new clean bag is in) .. Make Requisition of liquor and wine to be picked up the next day. .. Set up the lunch cups ready for next day. - Turn off Lights inside Liquor room and lock liquor room

Side Stations

.. Side Stations are clean and empty (no cookie plates or extra silver left inside) Wipe the Olive Oil and Balsamic Vinegar before putting them on the table. .. Lamps on Side stations are turned off Refill the side station's cutlery from the pocket ready for next day. Clean the dripping tray from frozen yogurt.

Salad Bar

.. Salad Bar is clean and prepared for next day operation Make Sure we have enough plates for the next day (Have back up plates) Put the lunch buffet signs ready for next day.

Other Duties

.. All silver has been polished and sorted .. Check that we have enough roll-ups for next day.

Bathrooms & Mechanical Room

- check that bathrooms are clean - check the mechanical room is clean and organized - Turn off lights

- Write Opening Assigments on Board - Make Floor Plan for next operation - Write down on "Captain Hand-over" any important information for next day operation - lock the office, downstairs and set the alarm Prepare for next day operation
