Lemon liqueur

INGREDIENTS

THE RECIPE • 500 ml pure alcohol • 700 ml water • 600 g sugar • 6 lemons Scrub the lemons in warm water and pat dry. Using a vegetable peeler, remove the peel from each lemon in wide strips. Be careful not to remove the white pith, which will confer a bitter flavour to the liqueur. Put the peels into an airtight container, pour in the alcohol and push down the peels with a wooden spoon to completely submerge them in the liquid. Tighten the lid, put the jar in a dark and cool place and let it rest for 3 weeks. After that time, bring water to a boil and let the sugar dissolve in it. Let the syrup cool down completely then add it to the lemon and alcohol mixture in the jar. Leave it to rest in a dark and cool place for a week then strain the liqueur and freeze.
