Happy hour can be considered a real marketing strategy, a way to promote sales, born in the U.K. to attract people coming out of work to the pubs. The technique is easy, they offer discounted foods for a couple of hours in the late afternoon, and I assure you that this works amazingly in London; it doesn’t make a difference whether it’s summer or winter, in every corner of this city between 5 p.m. and 6.30 p.m. you’ll see plenty of people in suits and ties crowded outside the pubs with a pint in their hands. In the 2017 ranking of the world’s best 50 cocktail bars, two of the top three bars were English, so don’t listen to those people returning from a trip to the City and claiming that you have to look for an Italian bar to find a proper aperitif. In London you can find great rooftop bars with amazing views; the only thing they lack of, in my opinion, is the history that you can find in pubs. Do not miss the chance to go and visit one to dive into the magical atmosphere of days gone by.

THE RECIPE ingredients ... and what to nibble on with it: Parmesan scones • 50 g butter • 225 g plain flour • 1 tsp baking soda • 25 g grated Parmesan • 150 ml milk • 1 egg yolk Put all the ingredients into a bowl except for the egg yolk and process them into a dough. Make round balls of 5 cm, put them into a muffin pan, brush them on top with the egg yolk and bake in a preheated oven at 200 °C for 13 minutes.
