Strawberry Fizz Mimosas

Ingredients:

- 7 cups sliced fresh strawberries (about 2 quarts) - 3 cups orange juice - 4 cups champagne or prosecco, chilled - Fresh strawberries for garnish - Edible glitter

Directions: Place half of the strawberries and half of the orange juice in a blender; cover and process until smooth. Press the mixture through a fine mesh strainer. Repeat with remaining strawberries and orange juice. Pour 2/3 cup strawberry mixture into each champagne flute or wine glass. Top each with about 1/3 cup champagne or prosecco. Stir in edible glitter with a spoon and serve with freshly cut strawberries for garnish. Please enjoy responsibly.

*Optional: If you have a juicer, replace the blended strawberries and orange juice mixture with fresh strawberry juice.

Dubai Chocolate Croissants

Ingredients:

- 4 store-bought croissants (or homemade if you have extra time) - 3 tbsp of simple syrup - 100 grams kataifi pastry cut into small 1 cm pieces

- 100 ml Pistachio cream - 75 grams milk chocolate - 75 grams of dark chocolate - 3 tbsp chopped pistachios for garnish

Directions: Place the shredded kataifi pastry to a small baking pan lined with non-stick baking paper and set your air fryer to 350F for 13 minutes. Mix the pastry halfway through the baking time (6 minutes) for an even crisp on all sides. Mix the toasted kataifi pastry with the pistachio cream until well combined. Slice the croissants in half lengthways and brush the insides with the simple syrup. Divide the kataifi/pistachio cream filling into 4 parts and spread it on the bottom half of each croissant. Place the top of the croissant back on.

Place the croissants in the Air Fryer and bake at 350F for 5 minutes. Once baked remove the croissants from the tray and allow to cool.

Melt chocolate in the microwave. Allow the chocolate to cool slightly and thicken. Add it to a piping bag, snip the end and pipe the chocolate over the croissants. Alternatively spread it over with a spatula. Sprinkle the chopped pistachios immediately. Serve warm.

Chocolate Covered Strawberries

Ingredients: - 10 ounce package dark chocolate (285 g) - 10 ounce package white chocolate (285 g) - 2 pounds fresh strawberries stems attached - Red food colouring* (optional)

Directions:

Start by washing the strawberries and then pat them fully to dry.

Microwave the dark chocolate in 30 second intervals, removing and stirring at each 30 second interval, until the chocolate has melted. Stir often, making sure not to burn the chocolate! Do this for both the white and dark chocolate. Holding a strawberry by the stem, dip into melted chocolate of choice, lift and twist slightly, letting the excess chocolate fall back into the bowl. Place the strawberry on parchment paper. Repeat with the rest of the strawberries, alternating dipping the strawberries between dark chocolate and white chocolate as desired for different colour variation. Let cool. Then, dip a fork in the melted white chocolate and drizzle the white chocolate over the dark chocolate dipped strawberries and vice versa (dark over white).

*Optional: add a few drops of red food colouring to the melted white chocolate to create a pink coloured chocolate for dipping or drizzling.

Rosebud Apple Blossoms

Ingredients:

- 3 apples - 2 sheets of puffed pastries thawed - 6 Tbsp of apricot preserves - 4 Tbsp of water - Juice of 1/2 a lemon or 2 Tbsp of lemon juice - Cinnamon & sugar for garnish

Directions: Remove puffed pastries from freezer and thaw according to package. Slice the apples in half from top to bottom. Remove the core ends and then scoop out the core in the center. Slice the apples into very thin slices. Fill a medium sized bowl half full of water. Squeeze the lemon juice into the water. Place the sliced apples in the water and microwave for 5 minutes until slightly tender. Drain the apples into a colander. When pastries are thawed, place them flat on a floured surface. Roll the pastries out with a rolling pin the flatten just a little more. Cut each pastry into 6 equal slices. One at a time, spoon apricot preserve mixture onto a slice of pastry. Place 7-9 apple slices along one half of the pastry slice with the peel side facing out. Fold the pastry in half to cover the apples. Starting on one end, roll the pastry and apples to the other end of the pastry. Place in a muffin tin. Continue with the other pieces of pastries until you have 12 apple roses. Place a pan of water on the bottom rack of oven so the bottom of pastries do not burn. Bake at 375F for 40-45 minutes. Sprinkle with cinnamon and sugar. Serve Warm.
