In black, chromatogram of sucrose/FOS solution treated with a sucrase enzyme mixture performing as 401

expected under the studied conditions. In blue, sucrose/FOS solution treated with a sucrase enzyme 402

mixture not performing as expected under the studied conditions. The sucrose has been completely 403

hydrolysed, but the FOS ingredient profile has been significantly altered demonstrating the enzyme has 404

also hydrolysed the fructan ingredient under the conditions used.
