In black, chromatogram of untreated sucrose/FOS solution. In blue, sucrose/FOS solution treated with a sucrase enzyme mixture performing as expected in the studied conditions. The sucrose has been completely hydrolysed whereas the alteration of the FOS ingredient profile is minimal.
