In black, chromatogram of sucrose/FOS solution treated with a sucrase enzyme mixture performing as expected under the studied conditions. In blue, sucrose/FOS solution treated with a sucrase enzyme mixture not performing as expected under the studied conditions. The sucrose has been completely hydrolysed, but the FOS ingredient profile has been significantly altered demonstrating the enzyme has also hydrolysed the fructan ingredient under the conditions used.
