1 In black, chromatogram of sucrose/FOS solution treated with a sucrase enzyme mixture performing 2 as expected under the studied conditions. In blue, sucrose/FOS solution treated with a sucrase 3 enzyme mixture not performing as expected under the studied conditions. The sucrose has been 4 completely hydrolysed, but the FOS ingredient profile has been significantly altered demonstrating 5 the enzyme has also hydrolysed the fructan ingredient under the conditions used.
