4 tblsp plain flour 1 tblsp ground coriander 2 tsp turmeric 2 tsp ground cumin 1 tsp paprika 1 tsp cayenne pepper 750g diced pork 2 tblsp oil 2 onions, thinly sliced 4 dried curry leaves 1 tsp grated fresh ginger 2 1/2 cups chicken stock 4 tblsp fruit chutney Combine flour, coriander, turmeric, paprika and cayenne pepper into a plastic bag. Add the pork and shake to coat well. Heat Oil in a large pan, add the onion, curry leaves and ginger and cook 3 mins until tender. Remove from pan. Add the pork to pan and cook over edium-high heat 3 mins or until browned all ov r. Return the onion mixture to the pan, add stock and chutney, bring to boil then reduce the heat to low and simmer gently for 30-40 mins. Serve with rice or mash.
