Free Pelican Educational Experience - The Entrance C ouncil has partnered with Marine Wildlife Rescue Central Coast to deliver a family friendly, educational, safe, eco-friendly pelican experience called ‘Pelican Time with Marine Wildlife Rescue Central Coast’. ‘Pelican Time’ is a free talk that takes place every Saturday, Sunday, Public Holidays (except for Christmas Day), and every day during School Holidays, at 3:30pm at Pelican Plaza, located on the waterfront at The Entrance. The Entrance channel and Tuggerah Lakes are home to many wild Pelicans who have become a well-known icon in the region. As a leading ecotourism region in NSW, and one of Australia’s first certified ECO Destinations, this new attraction will pay homage to these magnificent local birds in a respectful and safe way. Pelicans have played an integral role in making The Entrance a much-loved holiday destination for generations. Marine Wildlife Rescue Central Coast, with the support of Central Coast Council and Destination Central Coast, have launched this new educational talk that provides visitors with the opportunity to experience seeing wild pelicans in their natural environment, while learning about pelicans from trained volunteers who have been rescuing and caring for them for over 30 years. These FREE education talks cover interesting facts on pelicans, including care and rescue of pelicans in the wild, plus ways that we can all help protect pelicans and their environment by being waste wise when fishing and visiting this area of the Central Coast. See these huge birds up close and fully appreciate their beauty and size! TURNING of the TIDE A Central Coast icon has changed hands, and its new owners realise they have big shoes to fill

On the main strip of Copacabana sits Ocean Bar-Cantina, a spot that’s become the pride of the area since its 2020 opening. Growing into a favourite for locals and visitors alike, the restaurant offers diners a relaxed beachside atmosphere with a unique South American skew. Now, following a recent change of hands, the coastal icon has more eyes on it than ever, but new owners Michael and Liam are confident they understand the brief. “The reception has been great, and the locals haven’t been shy about telling us not to mess it up. I think if people are protective of the place, it’s because there really is nothing else like it nearby,” Michael explains. “We’ve got indoor and outdoor seating, a full-sized bar with beers on tap, an adored food and drink menu, and all of it a stone’s throw away from Copacabana Beach. L ow-income families and individuals across New South Wales seeking safe, fair and affordable loans to access essential goods and services such as car repairs, household items and medical bills may be eligible to apply for a no-interest loan of up to $2,000 through St Vincent de Paul Society (Vinnies) on the Central Coast. Member for Gosford, Liesl Tesch MP said these safe, affordable loans can make all the difference during challenging financial circumstances. “When a large household appliance breaks down and needs replacing, or you’re hit with a sky-high repair bill for your car, it can really rattle your world. It’s fantastic that members of our community experiencing financial stress can get some peace of mind, with access to credit safely and affordably.” “The last thing you want when you’re under financial pressure is to be caught in the jaws of payday lenders or buy-now-pay later schemes that can come with severe penalties. ” Vinnies’ No Interest Loans have benefited 60 Coastie’s during the past year. The number of loan applicants has doubled over the past two years. St Vincent de Paul Society NSW’s Gosford Regional President Annette Johnstone says Vinnies’ nointerest loans are worth considering before seeking alternative – and often more expensive - options. “There is no account or no interest fees. You can generally repay them over two years. With Vinnies’ No Interest Loans, you repay exactly what you’ve borrowed. “We’ve found that these loans often get people out of a spiral of debt. Because they’re not repaying any more than they’ve borrowed it gives people a financial skill they may not have had before – greater control of their finances. Vinnies makes no-interest loans available as a form of community service. “We are not looking to make any profit from it. As a non-profit organisation serving the community, our primary focus and our motivation is to help people to get the access to safe finance. Vinnies’ No Interest Loans Scheme can be used for goods and services such as white-goods, household furniture, educational needs (such as laptops, uniforms and school excursions), car repairs and registration costs, medical bills (like co-payments for specialists). Eligible applicants must have a Health Care Card or Pension Card or earn less than $57,000 per year after tax ($75,000 for couples or people with dependents). Other qualifying criteria include living at your current or previous address for more than three months. Some exceptional circumstances include applicants in transitional housing, people experiencing domestic violence, those in state/community housing transfer, and applicants who have not had an address for an extended period and those struggling to obtain proof of residency. The loan holder must be able and willing to repay the loan. Applications can be made by contacting 1800 484 664 (Monday to Friday 9am-3pm) or emailing nils@vinnies.org.au. THE EXPERT ask loss, is that of a very short lady who at 50 with 4 children weighed in at an enormous 100kgs. The truth about weight loss

Q: I’ve just turned 40 and have been struggling (more like fighting a losing battle) to control my up and down but steadily increasing weight problem since way back in my late teens. Seems no matter what diet I try (there’s been many) on or online “guru” I follow, it all ends up going the same way and I’m rapidly losing hope that I can ever win. Though I exercise until I’m really not enjoying it and try my hardest to go easy on carbs, after so many years without making any real progress, I’m getting very close to giving up. But I do know it will be worse if I do nothing and never move the 20+kg I need to. To be honest, after having gone down so many disappointing paths I’ve become very cynical about the whole weight loss story. Even someone who previously won The Biggest Loser ended up heavier than before he entered the competition. When I heard this, I felt really disheartened and remember thinking what hope is there for me if after all that massive amount of exercise he still went on to fail. I’ve heard you have had great success with helping people like me to not only trim down, but also to really get healthy and stay that way. So, you’re basically my last hope to not end up depressed like most of my overweight friends who now swallow meds just to cope with everyday life. A: Sorry to hear about your painful marathon journey and do appreciate the raw honesty with which you have expressed the tragic cycle of what I call the classic perpetual weight loss/diet treadmill that sadly multitudes never get off. It is indeed right up there with the worst of the worst marketing manipulation. Exploitation of desperation is a term I actually coined relating to Cancer patients, though it’s certainly also very applicable to the worldwide weight loss industry. Intertwined with positive thinking psychobabble (to be positive in the context of reality is sane rationale) the weight loss juggernaut rolls on as it peddles much false hope bringing disappointing outcomes such as yours to date. Hence, with no apology required you are now justifiably yet another one of many disillusioned skeptical consumers not wanting to fall for yet another magic silver marketing bullet that will melt away your excess kilos (the impossible dream). Nevertheless, be encouraged as your situation is definitely redeemable. One exceptional case in point, who serves as a great inspiration to many in relation to weight

to escape this vicious cycle. By implementing ethical practices, weight control becomes a vehicle to positively move forward to achieve ongoing vibrant health & wellbeing. Thankfully there is a commonsense approach that’s realistically achievable. Following is a key fact that most in our predominately overweight society who strive to reduce body fat while gaining/retaining lean muscle to achieve wellness completely miss in the process of being sucked into the typical vortex to consult Dr Google & his ongoing array of mostly US silver-tongued associates. The reality is diets fail & lifestyle wins. In our materialistic society, lifestyle is a word that immediately conjures images of possessions, travel to exotic destinations. Not to mention of course money itself. Ironically at the end of the day it’s not possible to take a single dollar out of this life which in reality is just a vapour in terms of eternity. Nevertheless, while we’re here the ideal natural lifestyle needs to be underpinned by a clean good balanced diet (not rocket science), yet the interpretation of what mainstream experts state this constitutes is so way off beam as to ever produce desired/required sustainable Natural results. Sustainable being the crucial word, for without a commitment to a functional & sustainable lifestyle, the real win simply cannot be expected. More good news is that by employing a lifestyle that both nourishes and is kind to the body, physiological functions are stimulated for more strength, stability & stamina. Central Coast Home & Lifestyle Magazine was honoured to be contacted by one of our readers aTuggerah Lakes Art Society member, Leone Meatchem who asked if she could paint the photograph we featured on the front cover of our Autumn 2024 edition. The painting entitled “Guard Dogs” was featured at the Art house Wyong in August in an exhibition called Our Natural World, “By the Sea, By the Beautiful Sea." Leone has done a wonderful job with her painting. Leone is very proud to have been awarded an OAM for service to jewellery design. A Central Coast resident for 37 years, said she was grateful and honoured to have been awarded an OAM. We would like to take this opportunity to congratulate Leone on her achievements.

Stuffed Chicken Breast with Creamy Mushroom INGREDIENTS

with salt, pepper, and stuff the pockets with the stuffing mixture, then seal with a toothpick. 3. Heat same pan add in the remaining oil. Add chicken and sear until golden on both sides, about 6-8 minutes in total. Set aside on a plate. TO MAKE THE SAUCE: 1.To the same pan, add minced garlic and cook over medium heat for no longer than 1 minute, or until fragrant. 2.Add in the mustard, flour, and whisk for a bit. Pour the milk little by little, whisking after each addition to incorporate and form a thick sauce, then add in grated parmesan, salt and pepper. Add additional mushrooms (optional) 3.Return the stuffed chicken to the pan and into the sauce and spoon the sauce over. 4.Cover the pan and cook over low heat for 15 minutes, or until the chicken is cooked through. Enjoy.

4 boneless chicken breasts

STUFFING 3 cups fresh mushrooms, sliced 1 onion finely sliced 2 cloves garlic minced 1 cup grated mozarella 1 tsp paprika Salt and ground pepper to taste 2 tbsp olive oil divided SAUCE 1 tbsp Dijon Mustard 1 tbsp flour 2 cloves minced garlic 1/2 cup grated parmesan cheese 2 tbsp fresh parsley, chopped Salt and pepper to taste 1 cup milk METHOD STUFFING: 1. Heat 1 tbsp of oil in a large non stick pan over medium heat. Add garlic, onion and mushrooms. Sauté stirring occasionally until mushrooms and onion are tender. Lightly season with salt and pepper and set aside in a bowl together with all the juices.

Sleep and Mental Health G etting enough sleep is crucial for your mental health. Among other benefits, it can help with your mood, your memory and your ability to manage stress. Equally, poor sleep can have a negative impact. If you’re regularly struggling to get a good night’s sleep and feeling the impacts the next day, you’re not alone. About 40% of Australians regularly experience poor sleep. There are things you can try that will help. Good sleep supports both your mental and physical health. There is no magic number for how many hours of sleep you should get. Most adults need about 7 to 9 hours every night, but it varies from person to person. Having a poor night’s sleep happens to everyone from time-to-time. But when these symptoms occur over a period, they might indicate a sleep disorder such as insomnia. You may find that your anxiety is worse at night, and you get stuck in a cycle. At first, you're anxious about not being able to sleep, and then you can’t sleep because you feel anxious. Sleep and mental health are two sides of the same coin - each influences the other. Getting enough sleep is a great way to support your mental health and can reduce the risk of anxiety and depression. People who don’t get enough sleep are significantly more likely to experience depression than people who do. Struggling to fall asleep, difficulty staying asleep, and oversleeping can also be symptoms of anxiety or depression. Tips for a good night’s sleep - There are many techniques you can try to achieve better sleep. 1. Regular physical activity - Being active throughout the day can help tire your body to prepare it for sleep. Although make sure to leave 1-2 hours between exercise and bedtime to allow your body to wind down. 2. Morning sunlight to set your body clock - Sun exposure in the morning, and dim lights in the evening, can help align our body clocks to the day-night cycle. This helps us to feel alert during the day and sleepy at night. 3. Limit naps - Taking naps outside your normal sleep hours can disrupt your sleep routine and make it harder to go to sleep when you need to. 4. Reduce caffeine, alcohol and smoking before bed - Stimulants such as caffeine and nicotine can keep your body and mind alert up to seven hours after they're consumed. Alcohol may send you off to sleep faster but can reduce the quality of sleep you have and lead to disruptive sleep. 5. Allow yourself to wind down - Give your body and mind a chance to relax. In the 1-2 hours before bed, unwind through a calming activity like reading, watching TV, or having a bath – whatever works for you. 6. Be consistent with your bedtime - Going to bed at a similar time each night reinforces to your body that it's time to wind down. 7. Set a digital curfew - Avoid screens by turning your phone off or on 'do not disturb' at least 30 minutes before going to sleep. Consider leaving your device in another room. Screen light and apps are designed to trigger hormones in your brain that keep you alert, as can engaging online content. 8. Make your bedroom your sanctuary - Keeping your bedroom quiet, dark and cool will create a healthy sleeping environment. Remove televisions from the bedroom so you're not spending time in bed awake. 9. Leave your worries out of the bedroom - If you find you're over thinking things, it may help to write down the thoughts you're experiencing to get them out of your head. Make a time to revisit them the next day so you know they will be dealt with, but not when you’re trying to sleep. 10. Get out of bed if you can’t sleep - If you’ve been trying to sleep for 30 minutes, but don’t feel sleepy, get up and do a relaxing activity. Avoid looking at your phone or watching TV. Go back to bed once you’re feeling sleepy again. 11. Try not to watch the clock - Taking clocks out of the room can help reduce your stress. It will prevent the counting down of hours until morning, adding to your anxiety. It can help to remind yourself that you’ve managed on poor sleep before. This can also help you relax which makes sleep more likely. Sleep meditation, mindfulness and breathing techniques can help you fall asleep faster by calming racing thoughts. If you are experiencing ongoing trouble getting to, or staying asleep, support from a health professional can help.
