Thankfully it is often not the case, and at ORRCA we love any opportunity to educate the public on our marine neighbours, particularly in how to maintain our legally required 40 metre distance from these animals both for our safety and theirs.” ORRCA operates a 24/7 rescue hotline for our cetacean friends on 9415 3333. Visiting Seal Colony in Central Coast Waters C entral Coast residents have been visited by a sea colony due to quieter waters as sea mammals have been migrating during the cooler months. Local surfers at ‘The Box’ have also reported surfing with a number of seals on occasions over the past few months. Jools Farell, Vice President and media representative for the Organisation for the Rescue and Research of Cetaceans in Australia (ORRCA), said that the migration of seals and whales usually coincide, with this time of year often the best to witness such animals. “We have a growing colony of seals in Pittwater that often venture to the Coast. The colony started about six years ago with just two seals, so it’s been great to see them now growing to about 27 seals.” “ORRCA since 1985 has been the only licensed state-wide body working alongside national park services to research, rescue and educate the public about our abundant marine life with a focus on cetaceans such as seals, whales and dolphins.”

Stuffed Chicken Breast with Spinach, Cheese & Walnuts
METHOD 1. Make the filling. In a mixing bowl combine the ricotta cheese, mozzarella, parmesan, chopped walnuts (save 1/4 cup walnuts for garnish), spinach, parsley, garlic and oregano. Add a pinch of salt and black pepper. Drizzle with extra virgin olive oil. Mix until well combined. 2. Pat the chicken breast dry and season on both sides with salt and black pepper. 3. Make a pocket in each chicken breast. Lay a chicken breast flat on a cutting board. Place a hand firmly on top of the breast. Insert a good chef’s knife in the thickest part of the breast and cut through to make a pocket about 3 to 4 inches wide (only cut 3/4 of the way in or you will split the chicken breast). 4. Spoon the stuffing mixture into the pocket of each chicken breast (try to equally divide the stuffing among all four pieces). 5. In a large cast iron frying pan, heat 3 tablespoons extra virgin olive oil over medium-high heat until shimmering but not smoking. Add the chicken in and cook on one side for 5 to 7 minutes, then turn over and cook on the other side for another 5 minutes to 7 minutes until cooked through.

2 garlic cloves minced 1/2 cup Ricotta Cheese 1/2 cup shredded Mozzarella 1/4 cup grated parmesan 1 tsp oregano 250 grams frozen spinach (squeezed) 3/4 cup walnuts finely chopped 1/4 cup fresh parsley, finely chopped
Creamy Mushroom Stuffed Chicken Breasts
METHOD
Sauce To the same skillet, add minced garlic and cook over medium heat for no longer than 1 minute, or until fragrant. Add in the mustard, flour, and whisk for a bit. Pour the milk little by little, whisking after each addition to incorporate and form a thick sauce. Once all the milk is added and there are no visible lumps, stir in the ground parmesan and season with a pinch of salt and pepper. Add additional mushrooms. Return the stuffed chicken to the pan and into the sauce, and spoon the sauce over. Cover the pan and cook over low heat for 12-15 minutes, or until the chicken is cooked through.

1. Heat 1 tablespoon of oil in a large non-stick pan or skillet over medium heat. Add garlic, onion and mushrooms. Sauté stirring occasionally until mushrooms and onion are tender. Lightly season with salt and pepper and set aside in a bowl together with all the juices. 2. Cut a lengthways pocket to each chicken breast. Season the chicken breast with salt, pepper, and seasonings on both sides and into the pocket too. Stuff the pockets with mozzarella and sautéed mushroom mixture, then seal with a toothpick. 3. Heat same pan and add in the remaining oil. Add chicken and sear until golden on both sides, about 6-8 minutes in total. Set aside on a plate.

Free Pet Registration for Rescue Animals Central Coast Council is encouraging community members to ‘adopt, not shop’ when making the commitment to bring a new companion animal into their home. This follows theNSWGovernment’sannouncement of free lifetimepet registration for people who adopt a rescue pet from Council pounds, animal shelters and re- homing organisations. Council Unit Manager Environmental Compliance and Systems, Sara Foster said free registration for rescue pets will ensure more abandoned or surrendered cats and dogs find a forever home, reinforcing the benefits of animal adoption. “Council works closely with our Animal Care Facilities at Charmhaven and Erina to ensure surrendered pets can find a suitable and safe new home. “With backyard breeding a huge issue on the Central Coast, we hope that this new initiative will make adoption an even more desirable pathway for those looking for a pet, so that we can reduce the number of people accessing unregistered breeders. Council Administrator, Rik Hart said pets are a much-loved part of the fabric of the Central Coast and this new registration fee exemption will make adoption an even more desirable choice for community members searching for a new companion animal. “It’s important to remember that while owning a pet can be highly rewarding, it is also a big responsibility. Hold your breath (on empty) for 4 seconds. 5. S tart by repeating this sequence four times—which will bring you to one minute of controlled breath. Make Walking part of your Routine Y ou carry your own body weight when you walk. This is known as weight-bearing exercise. Some of the benefits include: increased cardiovascular and pulmonary (heart and lung) fitness,reduced risk of heart disease and stroke, improved management of conditions such as hypertension (high blood pressure), high cholesterol, joint and muscular pain or stiffness, and diabetes, stronger bones and improved balance, increasedmuscle strength and endurance and reduced body fat. If it’s too difficult to walk for 30 minutes at one time, do regular small bouts (10 minutes) three times per day and gradually build up to longer sessions. However, if your goal is to lose weight, you will need to do physical activity for longer than 30 minutes each day. You can still achieve this by starting with smaller bouts of activity throughout the day and increasing these as your fitness improves. Physical activity built into a daily lifestyle plan is also one of the most effective ways to assist with weight loss and keep weight off once it’s lost.
