Lobster with lime & coriander butter 4 x 500g cooked lobsters 2 tblsp extra virgin olive oil coriander sprigs to serve lime wedges to serve.
Serves 4-6
up to enclose and twist the ends to seal. Chill until required, then unroll and gently cut into 1cm- thick slices. 3. Lay each lobster on its back on a chopping board and halve lengthways with a large, sharp knife. Pat insides of lobsters with paper towel. 4.Preheat a barbecue grill or chargrill pan on high. Brush cut sides of lobster with oil. Season. Cook, cut-side down, for 1-2 mins or until lightly browned. Turn and top each lobster half with slices of butter mixture. Cook, shell-side down, for 1-2 mins or until heated through. Serve with coriander, lime wedges and extra butter, if desired.
Caramalised camembert with macadamia nuts
INGREDIENTS • 200g wheel camembert • 1/3 cup macadamia nuts • 1/2 cup caster sugar
Lime & Coriander Butter 150g butter, room temperature, cubed 1/3 cup coriander leaves, chopped
• 2 tablespoons water • fresh figs, for serving
METHOD 1. Remove camembert from refrigerator one hour before serving to come to room temperature and place on a serving plate. Place macadamias onto an oven tray and bake at 200°C for 4-5 minutes until lightly golden. 2. Roughly chop macadamias and arrange over the top of the camembert. Combine sugar and water in a saucepan and heat, stirring with a wooden spoon until sugar dissolves, then boil, without stirring until a golden caramel colour. Take care that toffee does not burn. Working quickly, drizzle toffee over the macadamias and allow to set. 3. Serve immediately with fresh figs or allow to stand for a couple of hours. The caramel will soften and seep into the cheese, giving a bittersweet flavour.

1. To make the lime & coriander butter, place all the ingredients in a food processor and process until smooth. 2. Lay a piece of baking paper on a chopping board and spoon butter mixture onto the centre. Use the paper to shape into a log, then roll
