The Stone News: October-December 2024
GENERAL MANAGER’ S MESSAGE
DEAR MEMBERS, I am thrilled to share a series of exciting updates and future plans for the Club. Our focus remains on enhancing your overall experience and ensuring that each visit feels more memorable than the last. Our re-branded Ninety-One Restaurant has undergone significant improvements to offer you an even more inviting and elevated dining experience. Thoughtful renovations have refreshed the space, creating a warm, contemporary atmosphere perfect for any occasion. We can’t wait for you to see and enjoy the new look. Adding to the excitement, we have a new culinary team led by a passionate and innovative Executive Chef, Mark Porcaro. He has three new leaders joining our team and is eager to share his mix of creative and classic dishes crafted from the freshest ingredients. Matt Barna, Chef de Cuisine, will lead Ninety-One and other Founders aspects. Matt is a Culinary Institute of America graduate and has worked in leadership positions at Marriott Singer Island in Florida, as well as several of Emeril Lagasse’s restaurants. Dan Klinker, Executive Sous Chef, will be leading the Legacy operation. Dan has extensive experience in private clubs, such as Berkeley Hally in Bluffton, SC, The Old Farm and Hermitage Clubs in Virginia, Jupiter Country Club and Old Palm Country Club in Florida, as well as the famous Breakers Resort in Palm Beach, Florida. We are also fortunate to add the talents of Nick Rice, Roundsman Chef, who joins us from Memphis, where he held leadership positions at TPC Southwind, Chickasaw Country Club, and Ridgeway Country Club.
Autumn is upon us, and the club has a lineup of festive fall and holiday events planned to bring our community together. From elegant dinners to lively gatherings, there’s something for everyone to enjoy. Keep an eye on our event calendar and be sure to RSVP for these can’t-miss occasions. Reservations are now open for all of your favorite events. This year, we’ve replaced the declining Dickens Dinner with “Holiday Harmonies,” an elegant family dinner buffet including a Christmas concert, and we can’t wait to share the details with you. Looking ahead, we’re laying the groundwork for 2025 and beyond. Our budget planning includes essential projects such as paving at Legacy, Tennis, and Pool, as well as substantial HVAC replacement. An artificial hitting surface will be installed at each range for out side events and soggy days, and extensive cart path replacement will top the list of improvements next year. These enhancements are part of our ongoing commitment to maintaining top-notch facilities and amenities for our members. We are pleased to announce our strategic plan to pay down $1.5 million in debt in 2025 and 2026. At the end of 2026, the Founders’ new $4.5 M Irrigation system will be paid off without additional assessment. This move will strengthen our financial health and ensure our club’s stable and prosperous future. We are excited to launch our new podcast, “Greystone Unscripted.” Packed with insider stories, interviews, and club news, this podcast is designed to keep you connected with all that’s happening within Greystone. Please tune in to stay informed and engaged with our vibrant club life. Thank you for being an integral part of Greystone. The staff and I look forward to seeing you at Ninety-One Restaurant, participating in our events, and enjoying everything we have to offer.
Be sure to join us soon to meet the team and experience their culinary talents combined with our talented existing team.
Warm Regards, Dave Porter
