CRANBERRY WALNUT GOAT CHEESE
Makes 1 Large Ball or 16 Small
WHAT YOU NEED
HOW TO MAKE
• In a medium shallow bowl, mix together the parsley, cranberries and walnuts. • In a second bowl, use a fork to mash together the goat cheese and orange juice and zest. • Use your hands to from the cheese mixture into a ball (you can either make one large ball or about 16 smaller balls). Roll the ball in the cranberry mixture and press the mixture firmly into the cheese, making sure the entire ball is covered. • Serve right away or cover and refrigerate for up to 3 days. This cheeseball recipe is gluten-free. Serve with apple slices, dried fruit and nuts, and a selection of chips.
